Tonight I'm test driving a new recipe for Moroccan lamb and israeli couscous stew. Served with homemade dutch oven rosemary bread. Hopefully it turns out okay, because that's what I would like to make for our company on Saturday. If it doesn't turn out okay, I'll make a prime rib roast.

It was good.
I use my home canned tomatoes and three different beans that I can.
Onions and celery and a substantial amount of garlic.
It really is more of a bean stew with burger and sage sausage.
I used some Colorado hot sauce and it was perfect.

My son did a geography project years ago and we learned about Moroccan pickled lemons.
I never have used them.But they are pretty!
I need lamb or goat, and it is difficult to come by.
Maybe I will try some with pork.
I really do not know how to use them.

Last night we had leftover soup and chile. Tonight we'll have lobster tails and twice baked potatoes. Tomorrow is my sister's problem as we'll be going there for Christmas dinner.

Huge bone-in John Morrell Ham, with pineapple/honey/brown sugar sauce
Mashed taters, mounded high in the bowl and with a golden river of butter and flecks of pepper running down the sides.
Baked beans, slow cooked since last night
Hot yeast rolls, light and fluffy
Orange Salad
Shrimp dip and crackers
Creme cheese ball, peppered with pecans, pineapple bits, and green onions, served with mini slices of pumpernickle bread.

Christmas Day:

Ham sliders served on warmed yeast rolls
Whatever is left of the other stuff
Chocolate Pie
Easy Pie
Pumpkin Pie
Lemon Meringue Pie

I like to cook in a Moroccan tagine. Preserved lemons are used a lot, a lot, in Moroccan cooking. It's definitely an acquired taste, one that I'm still working on. Lamb is plentiful where I live. Goat is a different story.

But these cookies are killing me. I've gained 5 pounds already. Not good, not good.

I have tried, tried, tried to like okra. Just can't do it. A texture thing for me. Thank goodness my husband and his family aren't sweet eaters. I don't have to bake cookies, which is good because then I would have to eat them all. I am, however, going to make a three layer banana cake with cream cheese frosting today. What I don't eat I will share with my family.
