Hey Grandpa, What's for Supper? Part 2

I'm sorry it has that bad taste for you. I've found I really enjoy it. My husband was raised on the coast, so he's kind of a fish snob. The "acceptable" fish for him is so expensive, we simply didn't eat fish a lot for several years. And, in his mind, the only way to eat fish was to fry it. My first goal was to get him to accept there were other methods of preparing fish. Don't get me wrong, I love a good fried fish, but there are so many other ways to have it also! After we broadened his horizons on preparation, then it was on to "lesser quality" fish. I really embraced the tilapia when I had to be away from home in a motel several months for medical treatment. My mom was staying with me and she ate it frequently. The individual frozen fillets made it easy for me to have something like fish tacos as a fast, easy meal. Honey's finally accepted that it's okay to eat, he even suggested the Olympia recipe and had seconds

tonight will be zucchini casserole. I found a big stash of frozen zucchini in the chest freezer

I took a tropical botany course when I was young. I was told of this berry that people would make pies out of. If you were lacking a certain gene it tasted wonderful and it was delicious. but if you had it ,they tasted like dirty socks smelled.
I think cilantro must be like that, and tilapia.
My son also like swai (?)
We want to try some aquaponics, but even though it is a very easy fish compared to most to raise, I think I would want to go with catfish.

I did want to ask what fish Olympia was.
I had never had fish tacos until you were craving them, I had to go check them out.
 
Don't laugh, but I got the fish Olympia recipe from the nursing home I used to work at

. I know that sounds bad, but it was one of the cafeteria's offerings I really liked, so I asked the kitchen manager for the recipe. It's pretty simple...


Preheat oven to 375
Chop about half an onion and saute in 1/4 cup butter til opaque. Add a splash of white wine if you prefer and let reduce a little. Lay 2lbs fillets in a baking dish. mix 1 1/2 cup each mayo and sour cream. Add a good dash of lemon juice, some dill ( I throw in parsley, too) and about 1/4cup cheap Parmesan cheese in the green top can. Let the onions and butter cool a touch, then add to the mayo mixture. Pour over fish. I stop there, but the recipe I got said to top with bread crumbs or crushed crackers.

Bake about 20 minutes (25 if the filets are frozen) or until fish flakes easily with a fork.


Basically, it's making a kinda tarter sauce and baking the fish in it.

We used to eat a lot of catfish, until Honey stopped fishing for it for some reason. I just can't see paying money for it.

Ohh, fish tacos---maybe I'll have those for lunch sometime this week!

I was raised on the coast also and love fish and shellfish. I could eat shell fish every day of my life and be happy.

I know quite a few people who think cilantro tastes soapy. Personally, I love it.

My husband and I love fish tacos and we try them everywhere we go, looking for the ultimate fish taco. Here in the US we liked some we had in Tubac, Arizona. There's also a tiny, tiny Mexican drive thru in a small town about 15 minutes from us that has killer fish tacos for $2 each. Fortunately that's the town I go to to get my chicken supplies and have to drive right by that place.

I made snapper once- years ago- from one of my grandmother's recipes. You rolled them up with pecans and baked them in milk.
There was more to it than that, but my grandfather thought it was the best he'd ever had.
I miss fresh fish.

Don't they have a fish market in Florida? The fish is usually caught in the morning and then goes to market.
 
I miss living in Washington State, where we used to catch our own Dungeness Crabs, and Mississippi, where getting up at midnight with a bag of dry cat food and our cast nets used to result in a cooler full of fresh shrimp. <sigh> I'm a seafood junkie and I created a monster! I had to teach Katie when she was only 2 years old how to crack crab legs herself because I couldn't keep up with her, and how many 4 year olds do you know who adore mussels? She called them "Mermaid Spoons". We used to tell her dad that we were teaching her how NOT to be a cheap date! She loves mussels, crab (King and Snow), scallops, shrimp fixed any way possible, lobster, clams, again fixed any way possible, and her very favorite veggies are broccoli and steamed asparagus! Yep, that's my girl!

I am so sorry!

I live inland from the ocean about a two hour drive. We get same day fish here.
