Oh my goodness Ron those look amazing. I'm getting the pizza crusts started now, if I've got the energy I'll get those in the oven also. Sounds like exactly what I've been craving

My middle daughter had a craving for them too.

I need to make some. A co worker gave me some lemons yesterday.
 
I've been craving lemon/citrus lately, so I decided to try a recipe for chicken piccata. I've never had it before, but it sounded so good. It was okay, but not really anything special. The family decided for basically the same effort we'd rather have chicken parm. Lemon herb roasted taters and a huge salad rounded things off.

tonight is home made pizzas.

Oh my gosh, chicken or halibut piccata are my two favorite dinners on the planet. Nothing better to me than butter, lemon, and capers.

Tonight we're having farro with leeks, mushrooms, and shredded chicken - cooked in slow cooker with a rind of parmesan getting all melty in there - and a green salad.

Tomorrow my father-in-law and nephew are coming for dinner. I'm thinking I'm going to roast some chicken pieces with a lemon, garlic and parsley oil. Served with parmesan potato stacks, haricots vests with pancetta and shallots, and a salad. Followed by homemade moist moist chocolate cake with chocolate buttercream frosting. I'm on a cake baking binge. This is my sixth different kind of cake in about 8 weeks. I'm usually not a cake eater/maker, but for some reason I have a cake bug.
 
LEMON BARS

2 CUPS FLOUR
1/2 CUP POWDERED SUGAR
1 CUP BUTTER - NO SUBSTITUTES
4 EGGS
2 CUPS SUGAR
4 TABLESPOONS FLOUR
6 TABLESPOONS LEMON JUICE
1/2 TEASPOON BAKING POWDER

PREHEAT OVEN TO 350*. MIX TOGETHER FLOUR, SUGAR AND BUTTER USING A PASTRY BLENDER. PRESS INTO A 9X13 PAN. BAKE ABOUT 22 MINUTES UNTIL LIGHTLY BROWNED AROUND EDGES.

WHILE THAT IS BAKING MIX TOGETHER SUGAR, FLOUR AND BAKING POWDER, THEN ADD LEMON JUICE AND EGGS. I USE A WISK SO IT MIXES WELL. I ALSO ADD A COUPLE DROPS OF YELLOW FOOD COLOR SO IT' S A LITTLE BRIGHTER...WITH FARM FRESH EGGS YOU MIGHT NOT HAVE TO DO THAT

POUR OVER BAKED CRUST AS SOON AS IT COMES OUT OF THE OVEN. BAKE ANOTHER 22 MINUTES UNTIL CENTER IS SET. SPRINKLE WITH 1 TABLESPOON POWDERED SUGAR WHEN COOL. THESE SHOULD MELT IN YOUR MOUTH...ENJOY
