Hey Grandpa, What's for Supper? Part 2

Have you culinary connoisseurs seen these? I just rolled my eyes when Ken picked them up at the store. I'm not a big sweet eater to start with like Ken is, and I hate chocolate, so it always seems stupid to bake a cake. He'd eat 99% of it and be in a hurry to finish it "so it doesn't go bad." Well, he made one of these for himself last night - the carrot cake one - and it was delicious!!! I'm not kidding but I am shocked! There are 4 packets in a package. Dump mix in a mug, stir in 3 tablespoons of water or milk, put it in Chef Mike for 1min 10 seconds, take it out to cool for 2 minutes and it's cake!!! No frosting, but he put a dollop of whipped cream on it. Whooda think?

I never saw the mixes before.

The coffee mug cakes were real big about 4 years ago - they are called 3-2-1 Cake , and it is 3 tablespoons of cake mix, two tablespoons of water and stir for 1 minute/microwave for 1 minute. To make your own mix - combine a regular cake mix and an angel food cake mix and keep in a sealed container. The regular cake mix can be any flavor - I use a yellow cake mix because it can be flavored however you want it for each single serve mug. Pop a Hersheys miniature candy bar into the middle about 1/2 way through cooking for a lava cake. I add Hershey chocolate syrup with the water for a chocolate cake, sprinkles for a confetti cake, diced cherries and cherry juice for cherry cake, a little mint extract for mint cake - that one needs the Hershey bar to be spectacular, lemon extract for lemon cake, etc.
I love cake, but two of us can't eat a whole cake before it goes bad so this is a nice treat to have handy in the cupboard. And it is portioned properly for dieting - um - healthy eating.
 
It's a miserable 'B' of a day out there. Cooking a big pot of comfort food. Tonight we will eat chicken paprikas, dumplings, and creamed spinach.
