Hey Grandpa, What's for Supper? Part 2

Scalloped potatoes and ham. They're both on my “no” list but since my potassium checked a little low the doctor yesterday said I could eat limited potatoes and even a couple of slices of fresh tomatoes from time to time. I already take a prescription potassium 3 times a day, and he wants to try to bring my number back up naturally, without adding another pill, which could make it too high. So I get to eat a few of the things I couldn’t normally eat!

I think we’ll have a big salad too.

I didn't post yesterday. Dinner was something a little different: fried chicken thigh meat (cut into strips, breaded and fried) with fried rice (contained peas and broccoli for a serving of veggies) and some homemade Chinese influenced sauce I whipped up with lemons, bell peppers, herbs, salt, pepper, sugar, cornstarch and a bit of soy sauce. It was pretty tasty stuff.
