My migraine is STILL here, so I'm in need of fast 'n easy ..yet healthy.

How does Campanelle pasta with seared Wild Salmon filet and Alfredo sauce sound to you? I can steam some kind of green thing and do a fresh bread...

Does it sound healthy enough? Really.. my brain hurts, therefore it isn't firing off many synapses for me to feel confident that I'm thinking remotely straight

Today we are having chicken enchiladas for lunch and hamburgers for dinner. Kids come out on Sunday and one son sometimes comes early stays all day so I took the rest of the chicken I roasted Thursday and made enchiladas. If they don't come out early then they go into the freezer.

Well, everyone's been cooking up a lot of great food! I'm glad everyone's new year is going well. We always stay home and have snacks, drink a little, watch movies or play games depending on what we feel like. We don't stay up any more, haven't for years. We were in bed and reading our repective books/ mags by 8:30!
I didn't make much like I usually do, I only made mozzerella sticks and I tried these mexican cheese turnovers, they didn't turn out right but were still okay, DH brought home spring rolls, pot stickers, steak taquitos, and pizza rolls.

I woke up in the middle of the night with THE worst migrain I have had in months! I didn't dare lift my head from the pillow as I knew it would explode!! It hung with me until this morning. I thought the spring rolls and pot stickers might have had MSG in them but looked and they didn't. I was hoping to have this year without migrains. I ran out of my Inderal the middle of Nov. I haven't been able to afford to get a refill, so I used up all my vicadin between then and Christmas, I took one of DH's vicadin new years day and yesterday. Aneesa, I totally know what you are going through. I used to have migrains 4-5 days out of every week! I had a hysterectomy when I was 28 and it eased a little. I only had them 3-4 days a week. Over the years they have increased and decreased.

I have been making the smokies in sauce since I was a teen. I got the recipe in home-ec, but I make mine with grape jelly and mustard-it sound very strange, even stranger than ketchup. DH HATES mustard, but asks for these all through the year. My original recipe calls for hot dogs cut into 1" pieces, which was MUCH more economical when my kids were little. Now I go back and forth, whatever we have or feel like, sometimes I use keilbasa or smoked sausage, the sauce is good with meatballs also.

We have had a smoker for years, although since we moved to the mts. the end of 06', we have not used it. I keep asking DH, who is the smoker god, but he is waiting until he gets the back area done and pours a cement pad for it and the bbq. The best thing he EVER smoked was lobster tails!! They were the best I have ever eaten!!

DGD got another betty crocker children's cookbook from her mother for Christmas. She and DGS made dinner twice so far since Christmas.

We had bbq steak, basmati and wild rice, and baked potato for new years day dinner.

I think we'll have foccocia bread pizza tonight.

Aneesa- DH LOVES the sweet/sour dipping sauce that comes with the spring rolls, it's gooey pink. Do you have a recipe for something like it?

ZOO- glad to hear you are doing better. I was worried about you while I was offline. Have you gotten a chance to use your new pots and pans?

Hi cknmom! Nice to "see" you! Sorry about your and Aneesas Muse headaches. I suffered for years with migraines. I blacked out from one while carrying my infant, who is now 14! wow where does the time go, I went to the DR and he put me on Inderal. I took it for a year and my headaches all but stopped. I have had 2 that I would consider mgraines sinse then. Amazing! I am not sure why but I am not going to question or complain about my luck!! I wish you both the same!

We had venision stew and homemade cheese and onion bread last night, oh and apple pie my MIL brought out for us!

Tonighte wll be crab alfredo. I had froze the left over crab from our Christmas dinner. Also homemade french bread. And the rest of the apple pie!

Anyhoo.. that sweet 'n sour sauce that comes with spring rolls is really simple. Pineapple juice, some rice wine vinegar (or lime juice), some sugar, splash of soy or tamari, little corn starch to thicken it up some ..and if you absolutely must have it ..a dash of red color. (I get a reaction to artificial colors, so I leave it out.)


Homemade Pizzas! Fresh dough.. fresh mozzarella.. black olives, sh'rooms, sweet peppers, little smooshed garlic clove, and maybe some sausage. Muir Glen organic sauce ..cuz I got started late and didn't make my own

We had homemade pizza too... well sorta. Homemade crust (dough didnt rise right tho), canned s'getti sauce, shredded cheese and pepperoni. Lets just say, I tried with what I had.​

So sorry to hear about your headache, Monica. Could your reaction be from sulfites? I look forward to your Scotch Broth recipe. I probably won't get around to making it until the weekend, so feel free to feel better before passing it along. Thanks!

I also wanted to make cheesecake, Annesa's Muse, but I didn't have any graham crackers in the pantry. My hairdresser gave me a recipe for a lemon cheesecake she says comes from her friend who used to work at the Cheesecake Factory. I haven't tried it yet but the recipe looks really good. What kind did you make?
 
Thanks for the sw/sr sauce recipe! I will make some tomorrow for him! I don't need to use coloring.

Foccocia bread pizza with jar sauce(tomato and basil), mozz., red onion, pepperoni, pineapple.

I never thought of sulfites! I will take note of that and keep an eye on ingr. for sulfites in relation to my migrains. Thanks!
