Hey Grandpa, What's for Supper? Part 2

Keep in mind that everyone will do it differently, but this is how I make mine:

Cut a hole out of # of desired pieces of bread. My favorite is to use Texas toast. To cut the hole I just use a champagne glass.

OH! Save the hole!

I lightly coat the bread and hole (both sides) with butter and place both on a medium to medium high heat frying pan.

In the hole I put more butter (I'm a butter-holic), and crack one egg into the hole.

Once it starts to solidify and sizzle I personally like to break the yolk - my husband threatens me if I do this to his - he likes his yolk 'dippy'.

When I deem it ready, I flip my bread to cook the egg on the other side. I also flip the hole.

You can sprinkle shredded cheese onto it, or to avoid a cheesey mess on your frying pan, you can just lay a slice of cheese on top. My DD loves cheese - I forego the cheese.

Don't forget your grilled bread hole - perfect for dipping yolk (or so I'm told). I like to just eat it.

My directions are a little shoddy - but I hope this helps!

Enjoy!

Thanks!..the directions were great!...i'll be making them this week...thanks again!, Wendy

Hi everyone. I've been reading the back posts and everything looks soooo good. I'll be trying those eggs in a basket for breakfast this weekend. I saw that once on the move V for Vendetta and it looked good. I had forgotten though until I read it again here.

We are having plain old spaghetti tonight with salad and dinner rolls. The sauce is already cooking and smells really good.

I hope you all have a great day!

Aneesa's Muse :

I can't possibly be the only one cooking...

I didn't cook last night, but I'm making up for it tonight. DD had flute lessons yesterday so we didn't get home until late. Hubby and I had gone out to lunch so I wasn't hungry, plus I was missing ingredients to make up some of the things I thought the kids would like. In the end, they each had soup and chili (canned) and so did hubby when he got home. I didn't nibble on anything until much later.

Tonight I'm making Aneesa's adaptation of the Vietnamese dish I had in Paris. I sort of decided that while I was at the store this morning and didn't have the recipe with me. So, I was short on a couple of the dipping sauce ingredients, but managed to make do.

I have red lettuce, grated radish, bean sprouts, green onions, and cilantro. The steak is leftovers that I have placed in soy and a few other ingredients. I'll quickly warm that right before we eat.

I made a lemon glazed cheesecake for dessert. It smells good but I think I unmolded it too soon. It lost a corner. Maybe I can stick it back on and no one will notice.

That looks GREAT Monica! I'm going to copy that one down and will definitely try it. Sounds delish!

While at the grocery store today, I perused the discount meat section - the stuff they need to sell today. There was a bunch of imported Australian ground lamb so I snagged a few pounds, mostly because I rarely see ground lamb at the store. I froze it and will make gyros one of these days. It's so easy to do. Remind me to post the recipe when I make it.

You butter bread, cut a hole out of the middle with a biscuit cutter or round cookie cutter. Heat the pan, put bread on it. I also put the cut out circle on it, when I was a kid that was my favorite part! Put the egg in the middle, cook, I turn it as I don't like sunny side up eggs, but I know some people who don't turn it.

I make a recipe called toad-in-the-hole. It is an english recipe.

1lb. small pork links
2T. water
2eggs
1C. milk
1C. sifted flour
1/2t. salt
1/8t pepper

Cook sausage as usual. Beat eggs, add milk, blend. Add flour, salt, pepper, beat until smooth. Pour 1/4C. sausage drippings in bottom of 11x7x1 1/2" baking pan. Put sausages in bottom of pan, pour batter over all. Bake 425* 30 min.

The batter rises up over the sausages in a light fluffy airy pastry type thing(it's hard to explain) some parts of the sausages poke through so it's like a toad sticking it's head out of a hole.
It is a good quick easy meal. I serve it with maple syrup and fruit on the side, sometimes with eggs also. My kids used to like to watch it through the oven door.

Monica

The plan is s'ghetti and salad and whatever else comes to mind, once I get in there and start doing stuff

I still haven't made the Beef Stew, but I haven't been to the butcher yet either! Shame on me!

I am sooo making "toad in a hole" this weekend!

Sounds great, except for the eggs! I am not an egg eater, odd as that sounds! Unless they're hard-boiled, i.e. scotch eggs!

I hurt my hip a while back, and it was sore today- so I slaved over the stove for hours anyway and produced smashed (grilled) cheese and tomato soup! Man, what a job....

Anyone got a good recipe for chicken and dumplings? I was going to cheat again and use frozen dumplings and baked chicken breasts from last night.
