Hey Grandpa, What's for Supper? Part 2

Depends on how you like your dumplings.. Everyone I know uses canned biscuits, (easy way out) inside the chicken stuff. Jim likes his with the yankee dumplings. It's where the dumplings steam cook thierselves on top of the chicken. I have a recipe for them, one sec.. lol
1 cup flour
3 1/2 teaspoon baking powder
1/4 teaspoon salt
3 eggs well beaten
Mix flour , baking powder and salt
Add eggs till blended
drop by spoonfuls, cover cook 20 minutes DO NOT LIFT LID AT ALL!!!!!!

But basically boil your chicken, lift out, let cool, pick pieces off bone, return to water, heat, season to taste salt and pepper, when it gets back up to boil,(if dumplings inside chicken, add now) make flour thickener, add simmer till thick, If you want the ontop dumplings, add now, cover.

The dumplings sound easy enough, and I have all the stuff, so no point in buying frozen. I'm more of a dumplings on top type, and my DH will eat anything I make- as long as there's no tofu or artichokes- both of which I love!

This is gonna be GOOD!

BTW- 3 eggs whipped plus 3 drops of green food coloring and scrambled, make for some astounding green eggs! Serve with ham. Nearly gave DH an attack.

...what we do at my house is..we make the basic chicken and gravy mixture.(like skands)...get it good and hot...(medium boil)...and then we make up a batch of bisquick with milk (we cheat...LOL)..so the batter is thick and still pretty sticky...then we drop tablespoon full sized chunks on the top of the chicken/gravy....with a little space in between each dropped biscuit...place the whole thing in the oven..cook till the biscuits are browned and done inside...yum!

Aneesa, you would get totally fed up with my menus... I dont add the veggies and salads like you do. lol I just fix it, call it done, and make the kids eat it.
Last night, we didnt get home until 6 pm, the girls are in bed by 7. I still had to get dinner fixed, the girls showers done, and homework done in less then an hour. Would really help if homework kid could read the directions, but, we made tacos. Ugh not even taco seasoning.
Alyssa looked at her plate of taco, and told me, is this it? one taco? she took a bite, eww mom, wheres the taco flavor? What can I say, I hurried.! lol

How about baked beans?
Par boil beans (I've used great northern beans, can use any you want to try with) Fill pot with hot water to cover.
Add:
1/2 cup molasses
1/4 cup sugar
2 tsp dry mustard
1 tablespoon salt
onions chopped
handfull of brown sugar
Heat oven to 360* bake in covered pot
cook 6-8 hours -- check every hour to make sure water is above beans.
Can also add lil smokies, hot dogs, hamburger meat while baking.

Okay, here we go...
Roasted Beet and Cranberry salad
cranberries
3/4 pound fresh or frozen cranberries
1/2 cup sugar
1 1/2 tablespooon pickling spices, ground (or left whole and strained before adding the cranberries)
1/3 cup bourbon
1/2 teaspoon salt
For the beets and salad
3 medium beets
6 to 7 tablespoons vege oil
salt and freshly ground black pepper
2 oranges
1 cup pecans
1 cup plain fresh bread crumbs
1/2 cup all-purpose flour
1/2 cup whole milk
1 1/2 pounds walnut tabasco dressing
1 recipe sage goat cheese
1/2 pound applewood-smoked bacon- diced, cooked until crips, and drained

1 rinse cranberries. if frozen, remove fruit from freezer 15 mins before cooking.
2 combine 1/4 cup water, the sugar, pickling spices, bourbon, and salt. Bring to simmer over med. heat and cook 10-15 mins or until syrup coats back of spoon (strain out the pickling spices if using whole. Add cranberries and continue to cook over low heat for 8-10 mins or until you hear the cranberries begin to pop. Remove from heat and cool. Set aside, This step can be done ahead of time; cover and refridge the berries.
3 Preheat oven to 400*. Peel and cut the beets into 1/4-inch slices. Toss beets with 1 to 2 tablespoons of oil and season with salt pepper to taste. Transfer the slices to a sheet pan lined with parchment paper and cover with foil. Bake for 25 to 30 minutes until beets are tender but firm; a fork should poke throught easily. Remove foil and cool. Beets can be done 1 day in advance and refrigerated.
4 using sharp paring knife, cut off and discard the peel and pith from the oranges. Cut between the membranes to release the segments into a small bowl and set aside.
5 grind pecans and bread crumbs togather in food processor. Add pinch of salt and pepper. Set out 3 shallow bowls. place the bread-crumb mixture in one. lace the flour with 1/4 teaspoon salt and 1/2 teaspoon pepper in the second. Pour milk in the third.
6 Heat 3 to four tablespoons of remaining oil in a skillet over medium heat. Dip a beet into flour, then the milk, and then the bread crumb mix, pressing into ro make sure mixture adheres. Panfry the slices in batches until golden brown on both sides.2 or 3 minutes per side. Drain on paper towels.
***** to arrange the salad... toss greens with pinch each of salt and pepper and the tabasco dressing. Place greens on center of plate and springkle with the sage goat cheese, bacon, and cranberries. Alternate the warm beet slices with the orange segments around the edge.

Walnut Tobasco Dressing.
3 tablespoons walnut oil (Other nut oils may be substituted, adding thier own unique flavors)
4 teaspoons tabasco sauce
1/3 cup maple syrup or honey
Whisk togather in bow. Can be prepped several days in advance. store in fridge.

More good ideas ..I'm fresh out when I get a marathon migraine.. thanks, skand! I am going to try that Roasted Beet 'n Cranberry recipe, as well ...I think I have a few beets big enough in the backyard

I took out some ground chuck yesterday ..and I have some cabbage and lots of green bell peppers and quite a few small eggplants, too ....I hit up the "end cap" at Berkeley Bowl

...so there will be some type of dinner with those ingredients, I think.

I'm open to suggestions, of course...
 
I think I will make roasted guinea, with melted butter, garlic, salt and pepper, with some kind of rice stuffing, mushrooms, onion,broccoli and or cauliflower.
Well thats what I think sounds good to me, not sure if I'm capable of making it taste good.
 
I think I'll be drinking my dinner just like I did for lunch (soup). I had to have the crown on my $5,000+ tooth reattached this morning. It was loose and irritated my gums. Now I have a sore mouth, a headache, and no desire to eat anything.

Then again, that YUMMY cheesecake I made yesterday is soft.
