Hey Grandpa, What's for Supper? Part 2

Hey Aneesa I have only been catching a quick read now and then the last few days. Knee is slowly but surely getting better. Been having a problem with my fibro acting up but I am use to that.

Couldn't get on here too much till last night as my oldest sister (66) had a heart attack yesterday. She is ok and home again they caught it fast but it made for a long day.

I am the youngest of 13 and am 45 and she is the second child. It wasn't a surprise to me the way she is being ran into the ground by 2 of her daughters, one has 5 kids and one as 6 and my sister by her choice runs those 11 kids from morning to night it is hard to watch. This sister also lost a breast last year to breast cancer, she had her breast removed on a Tues went home Wens night and 4am Thurs morning was in the car driving them all over till 11 pm that night. So I was not surprised by the heart attack. But sure am sad because she was supose to make an appointment with her doc today for this week for a heart specialist and she is waiting till sometime next week as the girls need her help with the kids for the next two weeks at least. I expect I will lose my sister this year, then what will they do, better not cry to me.

I was wondering the same thing. When I've made shortbread I've always used butter as the fat. Isn't it Crisco that is used to make those chewy cookies? When I get a chance this afternoon, I'll try to compare your recipe with some that I have to see if I can see any differences.

So for supper it's....fried catfish, hushpuppies (mine), store bought corn on the cob...can you believe I said that? I'm out of garden fresh!!
Fried okra...yup, still have a coupla packages left in the freezer.
And my chocolate cake. My son is sick, and this was his request...maybe, cause it's his favorite?

Poor dear, a bad head cold.
The Rev. has been at the hospital since 5:30 am this morning...I know he'll be tuckered out when he arrives home..
we have a lady in our church having a 'major' surgery this morning.
She's still back there...they didn't take her back till 8:10 though.

Well, I'm not done with the school day yet...and got to start cooking.

Zoo.. I am really sorry to hear about your sister being treated that way, and especially having a heart attack after surviving the cancer. It's real unfortunate that her daughters can't see that it's time for them to be assisting her with whatever activity she wants to be involved in... but that's family for ya, ennit?

I wish you both well and you will be in my prayers and thoughts..


skand and Backyard Buddies... thank you for the tips. I knew I should've stuck with my tried and true recipe ..and BUTTER ..but I was curious about those Crisco things and decided to try them.. blah! They are not butter! I need a cow... DH did ask not long ago, "When are we getting a cow?"

Chili concoction has been in the crock pot since last night... I even put in some of my secret ingredient ..a little 99% cacao bar... just a wee little.

I'll make some cornbread later ..and a pot of rice (DH likes his chili over rice) ..and something green. I never know what goes well with chili ..other than a salad.. and that doesn't seem right either...

There are so many yummy sounding dinner's tonight that I think we need a road trip! There are so many of those meals that I'd love to try!

I hope her daughters realize that their Mom needs time to heal. And, I hope her Doc makes that clear to her. It must be so hard to watch this.

Annesa's Muse - Yep. I gotta be honest. I love shortbread (I'm a tea gal, especially in the afternoon) and enjoy a proper British tea from time to time. I've been to tea houses that make their shortbread each way - some with butter, some with shortening. I can ALWAYS tell when it's made with shortening and I never enjoy it nearly as much as when it's made with butter. I think there's just something about turning that mass of paleness into a beautifully pale golden brown that makes that butter just shine in that dish.

Btw, I checked my most regularly used recipe and it's a simple 3 ingredient shortbread - 1 cup confectioners sugar, 1 lb. salted butter (or use unsalted and add salt to the recipe), 4.5 cups of flour. That's it.

As for me, the weather is teasing us but I'm going to move on forward as if the weatherman was right. It's *supposed* to be raining but drizzles for a few seconds and then stops.

Anyway, I've had that leftover leg of lamb in my freezer since Christmas so I decided today was the day to try the Scotch Broth. But, now I need to buy another leg of lamb and make the recipe Monica posted a ways back. That looks sooooooo good! That'll be great in the Spring when my veggie garden is back up and running. If I can get motivated, I'll bake some bread and make bread pudding with the leftover ends I need to clear out of the fridge.
 
Baked chicken strips, parmesan garlic noodles and fried green beans with onion.

Skand I almost made breakfast for dinner tonight. It's one of my favorites, but my chickens haven't been laying and eating store bought eggs kind of depresses me now.

I'm so sorry for your Sister, and you having to watch her run ragged with her daughters. Maybe this time will be different ... she'll put her health first, and her selfish daughters will grow up and take care of her!

Aneesa - skand is right. Butter in cookies crisps while shortening keeps them softer. Margarine is an unknown because of the varying fat and water contents. Each fat reacts differently to heat which is why different recipes for baked goods call for different fats (Food Science 101 .... known as how things work and how to make food do what you want it to.) Forgive me .... time warp!

BB - lol! There's never enough lamb! My lamb bone is in the freezer to make a Mediteranean lamb and white bean soup, some meat is in the freezer for a good Irish stew, and like you, I need to buy another leg of lamb for the freezer.

It warmed up to 33 degrees today, so I spent most of the day trying to chip away at the packed snow and ice. Found the driveway pavement but still need to work on the patio, steps and paths to the coop and compost pile before the temps drop again tomorrow night. DH and DS forged the paths, but I figure I'll help them out, since this window of warm weather is so short.

It was omelette to order night here, ham, cheese, mushrooms, bell pepper, and onions to choose from. I still have nightmares about when I was in school, at a very upscale brunch, while at omelette station, I set my towel on fire while serving a fresh, made-to-order omelette. I'll just say I became the entertainment!
