Hey Grandpa, What's for Supper? Part 2

I'm glad you posted the pictures. I never thought to cut the squash in half that way and make it look cute, I always cut it in half from stem to stern...
I like to knock off the stem, stand it on the stem end, and cut the bottom in a circle like I'm getting ready to carve a pumpkin. Scrape out the seeds, add a nice chunk of butter and brown sugar, maybe some walnuts.
I put the lid back on, and zap it in the microwave until done.
 
That's the way my mother always fixed it too, Joe, except in the oven. Sometimes she'd add cinnamon, other times maple syrup. I hated squash no matter how she fixed it but in our house you ate what was served and did it with a smile on your face. She cured us of whining, "But I don't like that!" real quick. If we looked at something and went into our little dramas, she'd grin and say, "You're going to eat every bit of it" while she held a spoon loaded with more of the dreaded what-ever-it-was over our plates. The deal was, if is you complained you got an extra glop of it added to what was already there. We ate.

Now as an adult I love squash. Lots of foods I used to detest growing up are suddenly so good!
 
Blooie, that sounds so good! And would be great for Honey as a low-carb entrée. We don't eat much winter squash, but I'm going to give it a try.

Tonight is supposed to be lasagna, but we stopped at Costco this afternoon and I had a berry sundae...somehow just not in the "I'm hungry and want to cook" mode. But I think if I try to do YOYO one more night The Locusts will revolt. So, lasagna it will be.
 
Last night was a large salad with chicken from a rotisserie bird from Costco.

Tonight was classic pot roast, and then I roasted cauliflower to go with the roast, onions and carrots. I swear, we could eat 5lbs of carrots cooked with a roast!

Oh, I hear ya on the carrots with a savory roast, Rachel! And the best part is the roast beef hash the next night, with all those carrots sliced up in it and carmelized as they fry. Ohhh yah!!
 
Crisis for dinner today. Corn on the cob form the freezer, mashed potatoes, and baked cod loins. When I took the fish from the oven the Pyrex casserole dish literally fell into pieces, all over the kitchen floor. That was a new one on me. Ended up browning some burger for loose meat sandwiches.
 
Newer Pyrex has been having an awful time with that. My sister had it happen with a casserole except hers shattered IN the oven. <shudder> I have some pieces that I got as a wedding gift almost 48 years ago and it's still going strong. But people buying the new stuff have not been happy. I'm glad you didn't get hurt!
 
We're using 51 year old Pyrex. Think it will last another 50?

Steak, green beans, and grated potato cakes for tonight.

I was baking a chicken way back in 1993 in a pyrex baking dish and it shattered in the oven. The grease hit the flame if the gas oven and caught fire. I managed to get it out before the fire alarms went off but it was a horrible mess.

Those pans were from the 1980s so it is not that new of a problem. Stuff like that just happens sometimes.
