Hey Grandpa, What's for Supper? Part 2

Corned beef and cabbage with boiled potatoes, carrots and fresh rye bread.

One of my favorite meals. Just bought a chuck roast and now I am going to have to go out and buy some corned beef. You guys are making me hungry.
Dog gone it! No fresh rye.
 
So the chicken stock became chicken soup that night.
Last night we went out to eat to celebrate Echo's guardianship.
Tonight was stroganoff and peas.


I finally broke that little smoker out last week and smoked a bone-in turkey breast. it came out amazing! I'm hooked. And so much cheaper than buying lunch meat. I may try salmon next. It's not a very large smoker, that turkey breast was about as large as I'll be able to fit in there. But it has shelves where I could do pork chops. I've never had smoked pork chops but they sound great.

We have a Traeger smoker and I have to admit I was very skeptical. But I have to say it does a fantastic job, and one of my favorite things to cook on it is a whole turkey breast. We cooked our Thanksgiving turkey on it and it turned out great. My husband's favorite is pork (chops, tenderloin, ribs, anything porky).
 
I'll probably try ribs also. We've got a lot of pork, so I can experiment some. I've got a fresh picnic roast I may see about using at some point. I have to say we love the flavor, and I'm looking forward to experimenting with different woods for flavors.

Last night I cooked baby back ribs.

12 minutes in the pressure cooker and then 5 minutes a side under the broiler with sauce.

It was very tasty!

BBQ Baby Back Ribs - Pressure cooker

Ingredients

2 lbs baby back ribs
2 cups of your favourite barbecue sauce

Directions

Place the metal rack in your cooker and add 1/2 cup of water (I used 1 cup as the manufacturer of
my electric cooker recommends).
If your cooker is large enough you can bend the racks around in a circle. Otherwise cut into
sections and stand them upright in the cooker.
Lock the lid in place.
Bring to 15psi (high pressure in electric cooker) and cook for 12 minutes.
Remove from heat and use quick release method to depressurize.
When pressure drops, carefully open lid and use long tongs to remove ribs.
Cover with sauce by dipping in sauce in a shallow pan or basting well as you broil or BBQ the ribs to complete.
