I found an interesting recipe in one of my mags, recently...
Spinach and Chicken Pie. It calls for ground chicken, but shredded should work fine, too.
Heat oven to 375F and coat a 13x9 pan with oil/spray. Melt 2 T. butter in a pan and saute a large chopped onion. Add the chicken, 3 pkgs. of thawed/squeezed dry spinach, salt 'n pepper, 1/2 tsp. nutmeg, good pinch of red pepper flakes. Cook 5 minutes and transfer to a big bowl. Stir in 1 1/2 c. crumbled Feta cheese, 4 lightly beaten eggs, and a T. of fresh/chopped oregano.
Place a half sheet of Phyllo in the bottom of the pan, coat with oil/spray. Repeat with 7 more half sheets, coating each sheet with oil/spray. Spread spinach/chicken mixture over top. Repeat Phyllo with remaining 8 half sheets. Cut just the top layer into 8 equal pieces ..and bake 45 minutes, until top is browned. Recut to serve.
It isn't as troublesome and time consuming as it seems ..just like making lasagna, but a little easier, in my opinion. (And it gets rid of the leftover/excess chicken
)
