Hey Grandpa, What's for Supper? Part 2

The oldest has been begging for potato salad since Christmas. I'm thinking, yesterday was 91, today is supposed to be similar enough, she got to wear a dress to school, so I'll do sloppy jo's and potato salad.
 
That cake looks YUMMY!! I'm glad you had a great day.. and I'm sure your Mom was humming the birthday song to you, in her head!

I found an interesting recipe in one of my mags, recently...

Spinach and Chicken Pie. It calls for ground chicken, but shredded should work fine, too.

Heat oven to 375F and coat a 13x9 pan with oil/spray. Melt 2 T. butter in a pan and saute a large chopped onion. Add the chicken, 3 pkgs. of thawed/squeezed dry spinach, salt 'n pepper, 1/2 tsp. nutmeg, good pinch of red pepper flakes. Cook 5 minutes and transfer to a big bowl. Stir in 1 1/2 c. crumbled Feta cheese, 4 lightly beaten eggs, and a T. of fresh/chopped oregano.

Place a half sheet of Phyllo in the bottom of the pan, coat with oil/spray. Repeat with 7 more half sheets, coating each sheet with oil/spray. Spread spinach/chicken mixture over top. Repeat Phyllo with remaining 8 half sheets. Cut just the top layer into 8 equal pieces ..and bake 45 minutes, until top is browned. Recut to serve.

It isn't as troublesome and time consuming as it seems ..just like making lasagna, but a little easier, in my opinion. (And it gets rid of the leftover/excess chicken

And, because it's Wednesday, it's B4D here. I'm not sure what I'll make yet. I have a feeling that DS is going to beg for Lemon Pancakes. Our lemon tree is loaded this year.

DH needed some high protein snack food today, so I winged a "meener" version of croquettes and made a quick tartar like sauce (I like mediterranean style yogurt and more lemon in my traditional mayo/relish/vinegar mix). Too cold for coleslaw or green salad, so I fried up some cabbage/onion/peppers and made a quick fried rice with petite peas added.

I used happyhen's Crab Cake recipe, previously posted ..and added some pink salmon to the crab (both canned, btw ..6oz. cans of each, so still 12oz. total). Instead of milk, I used buttermilk ..instead of saltines, I used bread crumbs ...and instead of celery, I used mostly yellow bell pepper, but some red also. I added an egg, one small mushroom chopped, about 1/4 c. of petite white corn (frozen), and one chopped scallion. Salt, pepper, a little Bay "lemon 'n herb" seasoning, and a splash of Worcestshire. (And just like typing now.. I forgot to add the parsley...

I let them stand for a few minutes ..should've let them chill for the directed hour, but he was hungry ...and then I fried them 'til golden all around.


They were well accepted, so I guess "not too fishy" for his 'buds

I have some soup in the crockpot (a little of this and that- burger, veggies, etc) and will probably make an attempt at Texas toast. Since our discussion of TT a few weeks back I've done a little reading on it and think it'd go nicely with this soup.

Smells good in here!
 
I boiled up a mess of pinto beans and now have them simmering in the crock pot with bbq sauce and onion. We'll have tri tip with it and something else on the side.
