Hey Grandpa, What's for Supper? Part 2

I need input please. I am making cho. dipped coconut shortbread cookies. It is cold here this morning so my butter isn't creaming well.

DH said I need a heated bowl, DUH!! I told him maybe if I heat the bowl first, I will try that next time.

Anyways, The recipe does not call for ANY liquid at all! It is the consistancy of a struesel topping, just all crumbly. It needs to set in the fridge for an hour "to firm". What does everyone think, should I add a bit of milk to actually make a dough or not?? Any other shortbread recipe I have made always had at least a little bit of liquid in it.

cknmom - I wouldn't add liquid if the recipe doesn't call for it. Instead, I'd add a tad more butter. My recipe doesn't have liquid in it either but if it's too dry, it's usually the butter that is needed.
 
Today Im trying a new Red beans and rice recipe from Good Housekeeping.

Ingredients

1 cup(s) long-grain white rice
2 slice(s) bacon, cut into 1/2-inch pieces
1 small onion, chopped
2 stalk(s) celery, sliced
1 green pepper, chopped
2 clove(s) garlic, finely chopped
2 teaspoon(s) Cajun seasoning
1/2 teaspoon(s) dried thyme
1/4 teaspoon(s) salt
2 1/2 cup(s) Home-Cooked Beans, plus 1 1/2 cups bean cooking water
1/4 teaspoon(s) cayenne pepper sauce

Directions

1. Prepare rice as label directs.
2. Meanwhile, in 12-inch nonstick skillet, cook bacon on medium until browned. With slotted spoon, transfer bacon to paper towels to drain.
3. To bacon fat in skillet, add onion, celery, green pepper, garlic, Cajun seasoning, thyme, and salt. Cook 10 to 12 minutes or until vegetables are tender, stirring occasionally. Stir in beans and reserved bean cooking water, bacon, and cayenne pepper sauce. Cook 3 to 5 minutes longer to blend flavors.
4. Serve bean mixture over rice.
 
Tonight is steakhouse night-birthday party for a family member, so we are all meeting at the steakhouse. I do have an Awesome recipe (it looks awesome at least, haven't tried it yet, lol!) for a Loaded vegetable beef stew, out of this months Taste of Home magazine. My fridge is loaded with the veggies, ready to make them-it even has butternut squash in it, which I have never had/used before.

It's supposed to start snowing again here tonight, and into tomorrow, so I figured it was a good meal to have for tomorrow.

BrahmaMama - Can you post the loaded veggie beef stew recipe? (Or, is there an online link????) I love making soups and stews and would love to try that one. Enjoy your family celebration tonight! Sounds fun and tasty!
 
I used to get taste of home, I loved the recipes! I stopped it because I have soooo many recipes that I could make something different for breakfast, lunch and dinner every day for many, many MANY years!! I had to put a stop to something. I try not to aquire new cook books either. I started making my own cookbooks using our favorite recipes. I have all my cut out/printed out, etc. recipes in binders and as I try them , they either get thrown out or get put into our favorites. It has helped greatly!

I agree, that beef stew recipe sounds great, please post it(I'm still trying to keep new recipes at bay, usually with not much luck!)

When I last posted on here my computer wigged out agin, hopefully it doesn't this time.

I did not have enough butter in the house to add more, as I needed it for other things(thought I had another lb. in the fridge).
When I took it out of the fridge, it held together okay, but I needed to roll it and it wasn't that firm.

So I just pressed it into a baking pan and abked it, cut it. It is pretty crumbly but tastes great!

I will throw this recipe out and keep the one that works good.

I thought later on that it might be my alt. Most recipes when altering for alt. have you add extra liquid per C. of flour. I am at just over 5800'. I might try it with adding a tiny bit of milk to account for alt.

What do you think??

Sometimes I HATE cooking!!!

This has been an exasperitiing day!

I was making homemade onin rings which usually take me a short time, this time it seemed to take me fooorevvver!!! I started at 4:25 and ggoot done about 6:30!!!!! EVERYTHING went wrong!!

Sometimes I HATE COOKING!~!!!@
