Hey Grandpa, What's for Supper? Part 2

Tonight is Cheep chicken from Albertsons. low carb coleslaw, and dinner rolls. I made a poke cake for dessert. Funfetti cake mix and peach jello, garnished with peach slices. We'll see how The Locusts do with it. Cake isn't my thing so much, so not too tempting for me.
 
Coq au vin tonight. Used Chef John's recipe on Allrecipes, and two of my cockerels. It was......meh. The meat was tender, but honestly not much flavor. I may not have had enough sauce for the amount of chicken? Just seemed like a lot of work for what we got. Anyway, served with salad and rolls.

I'm going to pull the meat tomorrow and use for chicken salad, something like that. Dinner tomorrow night is planned to be leftovers.
 
Tonight I am making manicotti to be served with Italian bread and a nice salad. (As opposed to a not nice salad.)

Honey went to the butcher last night and come home with some lovely rib steaks. So they're rubbed and ready to go. I'll make cheesy taters and steamed carrots to go with. We've had enough dessert lately, so nothing there tonight.
 
pasta salad with artichoke hearts. I like artichoke dip, but hearts I have had a couple of different ways and they are not great. Great antioxidant food though.
 
Guess what I discovered!!?? Brussels Sprouts! Yep, I'm going to be 66 in a few more weeks and I've never eaten them before! We went out to eat last week and butter roasted Brussels Sprouts were one of the choices of sides with my entree. So I told the waiter I was going to try those. He said if I didn't like them he'd bring me a second choice but I told him that if I ordered something and it was properly cooked but I just didn't like it, it was my problem, not his! Well, he brought them, I tasted them, and I finished them BEFORE I even got to the entree! Yep, I liked 'em!! I loved 'em! I liked 'em so much we had 'em again tonight. I made them myself, too! Ken even tried one....and he ate the last 3 besides. Whoooda thunk? When I get to the Pearly Gates the first thing I'm gong to ask Ma is what else she never told me when I was growing up!

Shoot, I just had asparagus for the first time in March, shortly after my heart attack. Didn't think I'd like them either! Ma was a great cook, but veggies were salads, peas, corn, green beans and tomatoes. She didn't like anything else, so she figured we didn't either. Oh, Ma....you SO owe me!!

You have missed out, Asparagus and brussels sprouts are tow of my favorites!

Mom's do that don't they?

You can roast them in olive oil. Clean them up-- cut the bottom and remove brown leaves leaves; cut them if half if they are large. Put them into a bowl and pour in a couple of tablespoons of olive oil or melted butter. Stir them to distribute the oil. put them into a single layer on a cookie sheet and season with some salt and pepper. roast them in a 375 to 400 oven until soft and crispy.

My mom did this to us with blueberries. I did not discover them until about 10 years ago...And I love them!
