Hey Grandpa, What's for Supper? Part 2

I didn't cook.. there was plenty of leftover food ..and DH went to a friend's BBQ, anyway. I ate meds and washed them down with Canada Dry ...gotta love rain and changing weather. Woo hooooo..

I think I'll make some Carne Asada or Machaca, tomorrow ...one can marinate while we're at school ..or the other can do its thing in the crockpot. Either way, easy peasy... and I want to try out my new tortilla press, anyway!

I'm planning on minestrone soup for tomorrow. Just about to start soaking the beans. We love this soup, it uses everything that we grow in the garden. We either have it fresh or froze it last summer, including fresh cranberry beans, which I freeze in small batches, just right for soup.
I should make some bread to go with it.
Don't know what will be for dinner tonight. Haven't taken anything out of the freezer yet, so maybe it'll be BFD?
I also want to use up my frozen black berries, maybe we'll be having pie.
Sometimes we have desert for dinner.

Don't usually get any complaints.
It's a cloudy, cold, rainy day. A good day to putter in the kitchen and see what we can come up with. And heat the house up in the process.
 
Oh, a piece of good chocolate would be so good right now.

Happyhen, please keep sharing your adventures on your brick oven. I would love to have one so I enjoy hearing what you're cooking on yours.

Today, was a mixed up day - full of errands, places to be and people to see..........add in that DH is working a crazy shift and it's hard to plan a meal. I'm proud of myself as I got it together last night simmering 2 chickens with all the fixings. This morning I put the shredded chicken into the crock pot with a few other ingredients, slow cooked all day and we had BBQ chicken on buns along with cottage cheese, applesauce and chips. YUM!
.....and easy, too. Now, we have enough leftover chicken for a few sandwiches and I have chicken broth in the freezer.

It's been a very strange day, so now I am down to the grind.... "what's for dinner?"

I've been scrubbing things with toothbrushes and big burly brushes, for some hours, so I really don't even want to cook ...but someone will have a meltdown/temper tantrum ..and I've already lost my "last nerve" elsewhere ..LOL....

..uhh... yep!

Fish sticks, anyone? I'm kidding...

I made Tilapia Vera Cruz, which is a super-tasty & easy baked fish. A pound of tilapia, some canned tomatoes, jalapenos, salt & pepper, green peppers, onions and green olives. Bake at 350F for a half hour. Garnish with cilantro. Serve with brown rice and a veg.

ohiofarmgirl, thanks so much for the link and your postive review. I've copied the article and recipe and hope to try it soon. I bake most all of our bread and this would be a nice change.

It's a beautiful Sunday here. I'm take a few minutes for a much needed break and thought I'd check what cooking for BYC folks.
We are grilling hamburgers and will have sliced tomatoes and onions, potato salad, applesauce, chips and pickles. This afternoon we can snack on Pimento Cheese spread I made up earlier.

Chickenmaven, that sounds good. Anything that says take a can of tomatoes, add and bake... usually sounds good to me. Especially if I can also add garlic.

Well it was blackberry pie for dinner last night. It came out a bit tart, which is how I like it, SO prefers things a lot sweeter. But it tasted like real blackberries, not that fakey stuff you get from the store. I just added about two tbs of honey and some cornstarch to the frozen, thawed and strained blackberries, mixed them up and put them in the pieshell. I didn't feel like making more pie dough, so I covered it with crushed zwieback. When I took it out of the oven I generously sprinkled sugar over it. I will be snacking on it all day.

SO made himself a hamburger. He was hungrier than I was.
I've got the minestrone soup going now. Just going out to pick the fresh vegetables. Took everything else needed out of the freezer already.

I've got whole barley cooking now. I plan on making bread and adding the barley to it. I used to bake bread all the time, when my daughter was little and we were very poor. I made six loaves at a time in juice cans.
I wish I had some juice cans now to use. It makes perfect bread slices, even if your bread dosn't rise properly.

I'm ready for the rain to move on also. I'm tired of being cold and damp. I can't even let the chickens out, because they'll get drenched. The baby chicks have been in the house all this time also. I need to get them out, so I can clean their box thoroughly!!!
What a way to spend Beltane.
