Hey Grandpa, What's for Supper? Part 2

Today was an easy day - leftovers from yesterday's birthday party for my Dad. I had fixed Shredded BBQ Chicken sandwiches, grilled hot dogs topped with chili, onions and cheese, a layered lettuce salad, deviled eggs, assorted peppers, a cheese tray, applesauce, home made ice cream and a yummy chocolate cake. My Mom made potato salad, a sister made banana cupcakes and another sister made a mexican dip with chips and a yellow layer cake with chocolate frosting. So.......we had a few leftovers. Not much with all the hungry teens eating, but enough I didn't have to cook today.

I'm envious of all you that are grilling. Our weather has not been grilling weather - too rainy and windy. Also, DH is still working goofy hours. I sure hope we get to add grilling to our menu on a regular basis soon.

Redfeathers, I think it's neat to have our children cooking for us. They learn valuable skills and they are so proud to share their dishes at the table. One question.........does she clean up?LOL

It was a chilly day here ... good for cleaning the house ... but since I was NOT in the mood to clean ... I cooked.

(OK ... I did manage a load of laundry, cleaned the chicks and weeded the veg garden).

Lasagna Bolognese tonight. Homemade spinach noodles, homemade Bolognese sauce, a homemade bechamel, lots of imported Parmesan .... heavenly (and a bit of a splurge!). A green salad from the garden, fresh, crusty Italian bread and zabaglione.

Redfeathers - It's so good to "see" you! Your absence is noticed! How nice for your DD to cook dinner ... enjoy! Curry sounds really good.

prairiegirl - It sound like a wonderful birthday celebration for your dad. What a feast you prepared!

thechickenchick - How funny, I've had a taste for mashed potatoes ... with or without gravy ... for the past 3 days!

BB - Thanks for sharing that apricot "cobbler" recipe!

We all love fruit based desserts here, and that is at the top of my "must make" list.
 
You all have some nice celebrations and dinners going on! Yum!

Tonight we had roasted herbed chicken, brown rice, and a vegetable medley.

The kids polished off the apricot dessert and even left me a couple of bites!

I've been a little busy lately.
Tonight's dinner consisted of purchased "free range" chicken cooked in the slow cooker with home canned tomatoes, spring onion, garlic and parsley. Green fava beans from the garden, leftovers consisting of: fried cabbage (shredded homegrown cabbage, garlic, butter and olive oil in a pot, covered and cooked til soft - no peeking!), green salad, regular and wild rice, potato salad. For desert I cut the tops off of 3 day old muffins, browned the bottoms in the oven, put sugared strawberries (also left over from sunday's dinner) on top and some whipped cream. I also browned the tops of the muffins, which I am sure will disappear by tomorrow afternoon.
We made a great dinner on sunday, since my brother and his wife came to visit from out of town. We used mostly stuff we grow ourselves. We bought the meat for the bbq (tri-tip) and FIL supplied the rice and also the muffins.
And we are still eating the left overs. I hope they got finished off tonight. Stepson just came home for dinner and brought a friend. Those teenage boys sure can eat!
 
We almost didn't have supper last night!! I was a day early on the "Breakfast for dinner" but DS had asked for waffles. My plan was sourdough waffles, sausage and fried eggs. What I didn't plan on was the power going out 5 minutes before I plugged in the waffle iron!!

We had horrible wind all day and the power would blink in and out. Well as soon as I had everything out, it went off for good! Well an hour or so! DH came home hungry expecting supper on the table as usual and DS is always hungry!!(Teens

Finally about 8 it came back! As far as today goes, no ideas yet! Maybe those chicken and Dumplings that were mentioned a few days back. Who knows, maybe I better have a "no power" back up plan, the wind is bad all ready!

thechickenchick - Goodness! What an event! I hope that today is better and that your supper plans aren't derailed again by the wind. Maybe you jinxed yourself by attempting to have Breakfast for Dinner on the wrong day.

It IS B4D here today and I'm sure it'll be something soft. DS just had his braces adjusted yesterday and is needing soft things. After this week, the two of them will be on the same schedule and I can plan soft meals all at once rather than week after week. So, I'm thinking it'll either be something like pancakes or oatmeal tonight.

FarmerDenise, I've never thought to use leftover muffins that way. What a neat idea.

thechickenchick, we've had our share of power outages and those are good nights for grilled cheese and soup. Also, eggs. It sure must have been frustrating as you were just about to start baking the waffles.


Backyard Buddies, hope the braces schedule gets worked out soon with your family. Sure would make it easier on you. It's hard enough coming up with soft-type meals.

I made mozzarella this morning and will use some home made cottage cheese and spaghetti sauce to make lasgna this afternoon. My lasagna is a hit or miss as far as being visually appealing. It always tastes good, just sometimes it doesn't want to serve up nice.

its been crazy here the last couple days. Tonight its scalloped potatoes, hot dogs (above Im reminded I may have some chilli sauce for those) and baked beans. Its about 83 * here so probably ice cream for dessert. I love a milkshake but Ive always struggled with the fancy schmancy blender my sister bought me. Id feel guilty buying another one though.

Chili dogs and Lasagna sound great! I know what you mean Prairie Girl! MY DH always says, "Don't worry Babe, its the taste that counts!"
