No spinach so I am defrosting some mashed maple/butternut squash and am going to add a Caprese salad to the above.

Last night was Nachos with homemade Nacho Cheese sauce. I usually just use shredded cheese and broil them, but DH said you gotta have Nacho Cheese sauce for nacho's, so I found a recipe and made it. He made himself soft shell taco's for supper...
But my nachos were wonderful!
