Hey Grandpa, What's for Supper? Part 2

I didn't post it, but days ago we did tacos. That's a worthwhile post. We go all out. I did lengua and chicken. The chicken was simple - pressure cooker with onion, garlic and seasoning. For the lengua, I braised beef tongue. Then I skinned the tongue, chopped it up and fried it with onion, garlic and my touch of seasoning. DW made Mexican rice. I made refried beans from scratch - pinto beans cooked with a chunk of homemade bacon rind and seasoned well, then blended in the Ninja and cooked again. I also made fresh guacamole. Pico de gallo and salsa were store bought this time (normally I would make homemade salsa). We put out chopped tomato and onion as well as shredded cheese (mozzarella instead of chihuahua unfortunately). We served all that with corn tortillas and tortilla chips.
