Hey Grandpa, What's for Supper? Part 2

Have a dressing recipe I was given but very little mayo I add makes for yum
Salad Dressing

1 cup mayonnaise
½ cup olive oil
¼ cup vinegar
4 tblsp lemon juice
2 tblsp parsley
1 tblsp sugar
3 tbsp Italian seasoning
3 cloves garlic
4 tblsp fresh black pepper
More or less is up to the maker
Mayo AND oil :eek: it’s one way to keep one “regular”, I’m sure:D
 
I stripped the stems and then cut the leaves into squares roughly 1.5"x1.5". Pile them in a pot some chicken stock, piece of smoked pork or turkey, onion, garlic, salt and pepper. You could add more seasonings to suit your taste. I toss in some Cajun seasoning I mix myself. Simmer that pot for an hour or two, and then eat.
Thank you! I made a stew with veggies from the garden and Andouille sausage. I prepared the collards like you suggested and I loved them! Such big beautiful easy to clean and work with! In a few days I’ll try them with just broth and cook them longer.
