Hey Grandpa, What's for Supper? Part 2

SO made bbq'd ribs and potato salad. We had fresh peaches and plums from the garden for desert and snacks. I ended up if a blinding headache, so we stayed home instead of watching the fireworks from a friends house.

DH got take out last night cuz my head was being snarky again. Tonight, tacos.. and whatever else I figure out... before he gets home from class

I havent had much time to post here since school is out and have lots of outside work to do inbetween the rainy days. But I wanted to share one of my thow it in a casserole dishes that has become a regular. Chicken and pea alfredo lasagna. Barilla no cook lasagna noodles, chopped left over chicken, small can of peas, i jar alfredo sauce (I like Barilla) and your regular ricotta, egg and mozzarella mixture for lasagne. Just start with a little sauce, noodles, ricotta mix, chicken, peas and sauce and layer. I use a small container of ricotta and 2 cups of mozarella for a small square pan, use more the larger the pan. Then I microwave on med high till the noodles are cooked.

eta, you can mix and match what you like, I use cooked and drained loose sausage and spinach too.

SO made bbq'd chicken legs and pesto pasta, using our fresh basil from the garden. I tried to get away with making a quickey salad for the "vegetable dish", but SO inquired about me making some zucchini. So, since I was goofing off all day, I figured I better pick the zucchini and cook it up.

For desert we are still having fresh plums and peaches. We will as long as they last....

Yes, I'm still around! I've been making soap like a wild woman so we've been doing a combination of leftovers and easy stuff - leftover steaks and ribs, leftover hot dogs from the 4th, and tonight I finally cooked something. We had zucchini patties for appetizers, then a marinated and grilled chicken, rice, and salad for dinner. Yummy stuff, especially enjoyed outside on the patio with a nice late afternoon breeze.
