Hey Grandpa, What's for Supper? Part 2

Thanks thechickenchick! I can't wait to try the mock apple pie with zukes!

We arrived home yesterday from Hawaii (via Portland). With the tropical storm due to arrive today, it looks like we got out just in the nick of time. It was our first trip to Hawaii and we had a wonderful and relaxing time. It was tough getting up this morning because I'm still on Maui time.

I'm glad to see you all cooking and enjoying great things. I look forward to getting back to cooking again, though I really need to go to the grocery store first. Hubby picked up pizza for last night.

Hamburgers and homemade french fries last night. It supposed to hit 90 today. We live in a little single wide trailer so on days like this it feels like your living in an oven! I will turn the AC on here real soon.

So for supper I am thinking maybe a salad?

I gather a lot of ideas from the foodie mags and online sites.. then do my own thing, usually. It keeps my DH interested..

When it's too hot for the stove and oven to go, I use one of my trusty kitchen "gadgets" for minimal heating upper effect.. the crockpot, the rotisserie, the GF grill.. or... serve something chilled, like your salad or some variation ..sandwiches ..... or.. just get outside and crank up the grill!

It seems to be cooler here, today ..so I'll think of something shortly, I hope. I have a lot of fish options in the freezer ..and a few chicken part options, too.

At our house we call them "experiments". It's hot hear too 100+ today so like you trying to think of something cool. Since our Brandy Wine tomato plant is producing some nice ones may be BLTs are in order.

It was a plus for us when the Gas Grill that we bought a couple of years ago came with an oven! We have pizza night every Friday so it can be done in the oven outside! A quick dip in the pool, nice glass of wine on the deck and we all set.

DFR I am envious of your outdoor oven! What a wonderful asset!

I have decided on a steak salad. I had forzen the left overs from our rib steak the other night. I think I will sautee it with some garlic and onion in olive oil. Does anyone have any other ideas to make it better? I have some peas, and carrots from our garden to use too.
 
Tonight, it's venison loins on the apple wood grill, with green and purple peppers, and whole onions, that turn out very sweet. Along side that, I have potato pockets, that include garlic, and oregeno for spice.... of course I'm enjoying a long tall cold one, while being the grill master.

Ho-made apple pie with some red raspberries mixed in for fun and color and flavor....

The gardens keep me buzy, all day long....the harvest is something I consider very special every year, and never take for granted. It is shared with many needy folks.

Is this Heaven?

We're having ham with boiled potatoes and boiled carrots. I just had a craving for carrots, so that's what we're having, unless SO wants to make something in addition. There'll probably be a salad also, since we pretty much always have a salad.

When it's too hot to cook, we either get take out (not very often, since we're too broke), sandwhiches, or salads. Once in a while it'll be chips and dip night. I.e. potato chips and sour cream and onion dip. or tortilla chips with cheese melted on top and salsa and refried beans diluted with a bit of water and microwaved so it is easy to pick up with the chips.
 
thechickenchick Thank you for the recipe for Mock Apple Pie. I made it over the weekend. No one believed it wasn't apples. My son kept asking me but Mom where is the zucchini at. He thought the zucchini was ground up and mixed with the apples. Thanks again I just love these old recipes Micki
 
It cooled off significantly, so I made a pizza.. or.. I am making a pizza right now. I had pepperoni in the freezer still... and will add fresh mushrooms, mozzarella and red onions ..make a salad ..and call it dinner!

I thought about Calzone, but gave up for some reason ..and I can use the ricotta in a lasagna later this week.

Tomorrow, will grill some thighs and add a little asian flare to them ..with sticky rice and probably some kind of coconut based curry vegetable on the side. I just made my mouth water..
