Hey Grandpa, What's for Supper? Part 2

Last night we had the last of our homegrown Cornish Rock meat birds from the freezer. We need to make room for this year's birds which are scheduled to be harvested next weekend. Mark roasted it on the BBQ and had with a Grain Mix from Traders Joe's and steamed Broccoli.

So tonight will Chicken tacos with leftovers.

Wooo! Tonight is a family fav.! Chicken enchelada pie!

Think of it like a mexican style lasagna. Just layer all the stuff you normally find in an enchellada.

Fry the tortillas and dip them in your sauce then make a layer on the bottom. Cover with meat, onions, olives, and cheese... repeat till the casserole dish is full. Then bake till melted and browned a bit. Now the hard part... wait for it to cool
