rockpot Meat Loaf

2 pounds ground beef
2 eggs
3 Tablespoons minced dried onions
1 cup finely crushed cracker crumbs ( put in a plastic bag and roll with a rolling pin until almost like flour)
1/2 cup milk
1 1/2 teaspoons garlic salt
Potatoes
Carrots
Onion
8-ounce can tomato sauce


Place first 6 ingredients in a large bowl and mix well with your hands.

Grease the Crockpot with Pam.

Place meat mixture in the Crockpot and form into a loaf.

Peel several potatoes and cut into very thick chucks and place around meat loaf. Peel several carrots, cut into half or thirds and place on top of potatoes. Peel and cut an onion into thick slices and place on top of the meat loaf.

Pour an eight ounce can of tomato sauce over the meat and onions. Place the lid on the Crockpot and cook on high for 6 to 8 hours or on low for 9 to 12 hours.

Tutter - glad you all are okay, at least for the time being. Sending prayers of protection your way. I am in a better mood today - smoke is still here and it's supposed to be hot again (although not as hot as for you - 109 - yikes!). Power is back and my headache is gone, so things are looking up. I'm impressed that amidst all that's going on for you, you can still put together a great meal. I've been feeling very uninspired to cook of late. The meals on here always sound so great, but about all I feel like making today is jello. Would that be a bad meal? What if I add fruit?

I'm so glad to hear you're OK for now. I know this must be very stressful to sit in this place of 'not knowing' and I hope that you'll find strength throughout.

As for your critters, if an evacuation order comes about, do you have a county fairgrounds that is taking in animals? Do you have the means to remove all of them?

Maybe you could have sandwiches, then jello? (Tuna or salmon salads? Salami? Hard boiled egg? Avocado? BLT? Peanut butter and ? Egg salad? Chicken salad?) Most anything tastes good f you start with your favorite bread. A nice loaf of rye, French, sour dough or the like. Get your favorite mustard, or whatever you like, and then just add deli meat, cheese etc. Maybe a slice of Vidalia onion, some olives, crispy chilled lettuce. Pickled something on the side with a cold drink.

I know that even frozen foods are out because, who wants to use the oven in this heat? Supermarket pre-cooked chicken? Hotdogs? Shrimp cocktail? Chinese take-out?

I'm just cooking in self-defense, since I'm out of yogurt.

Backyard Buddies, thank you so much!

Yes, there are 2 county fairgrounds which will take livestock. Neither are all that close, but that's not too big of a problem.

The problem is that, no, I've no way to transport them. I can see now that we need a livestock trailer. Dh even had a great idea for putting hooks on the inside to hang livestock panels. Then, when you get somewhere, you can set up temp. pens. I was wondering if you could partition off a portion for the chickens?

Good ideas for when we eventually get one, and it's obvious that we have to, but we don't have one during this time. So that's got me very concerned.

On a lighter note, out of my 28 1 month olds, it looks like I have 4 roosters. Hmmmm, should I be bringing them up on a food thread??!

I have never been to Baja, y'all ...what's it like? Anyone know? Sadly, I'm not as well traveled as I'd like to be ..even stateside, but especially not internationally.

I made BLT's for a late lunch ..finally had the hearing today... and I'm going to do something with some yardbird this evening ..not absolutely sure just yet.


Is it terrible that I'm sitting here eyeballin' Ben ..the House Roo... with a grumbling hungry tummy?

Okay, finally made up my mind on dinner. DS went to hang out at a friend's house (they have a pool), so DH and I will be having Teryiaki-Ginger Salmon and a salad - I boiled up some red potatoes and eggs, so I'll slice those up, along with some green beans from the garden and some lettuce and a vinegarette dressing. Oh, and jello!

I just pureed a big ol' squash and stirred it into some tomato sauce w/seasonings, and am simmering...is that gonna work? The squash was raw when I pureed it, I'm relying on it cooking in the sauce. Just serving sauce over rotini w/leftover fresh mozzarella & thyme from last night's quiche.

I'm sure that would work, Ninja, and it's a great way to get some more veggies into the diet! The only possible issue would be if the squash let off some moisture that you'd have to boil down some. I bet it was tasty!

I have a casserole in the oven. It's a bit like an eggplant parmesan, but different. It is seasoned and breaded eggplant slices, topped with a saute of onion, bell pepper, and mushrooms, then layered with diced tomatoes (I used canned). It's cooked for a half hour, then covered with Mozz and parm cheese and baked again for a half hour. It smells good! I'm serving that with homemade French bread. Dessert is vanilla ice cream with a warm rhubarb sauce.

That sounds delicious and yes the squash will cook in the sauce, you just may need do evaporate some liquid until you get a consistency you like for your pasta.

DD and I had "girl" time today before she goes back to college, so it was tuna salad (either on greens or a sandwich on yesterday's bread), chips or crackers.

To all those threatened by fires and smoke, please be safe. Thoughts and prayers are with you and yours.
 
Hi, so glad your ok Tutter and hope you stay that way.

I had bologna and cheese and I bought a key lime pie at the grocery store. It was on sale for $2.00

And I was going to say it was too hot to cook but since it was only in the high 80's I'm just going to admit to being lazy.

When my daughter lived at home I cooked every night, now that its just the two of us I just don't see the point sometimes. DH said he wasn't hungry. Works for me!

But that meatloaf looks very interesting
