I bought them already marinated at Henry's, a local health food store.

There are many recipes on their website, but I didn't see that one. It may be that they're using a commercial marinade, then adding to it. It has fresh green and red pepper pieces and fresh onion and cilantro in it. I usually buy a small supply when it's on sale (usually around $1.79/$1.99 a lb., then freeze it in smaller portions. The next time I'm in there I'll ask what they're using for marinade.

Hope things cool down for all of our over-heated members! Doesn't sound fun!

In my search for Baja recipes, I came across a forum dedicated solely to Baja food!! Amazing...


...and I've decided that we must have some Baja something for dinner, so I'm off to plunder through my herbs out back ...or to the market..

...whichever yields the goods I need!

You're welcome! Some of my favorites are fish tacos (grilled not breaded) with shredded cabbage, cheese, and fresh salsa, along with steamed rice (with salsa) and black beans. Yum! Any of the asada dishes (grilled), anything with shrimp or lobster.

The dish from Henry's was called Pollo Asada. There is a bit of citrus to the marinade, probably lemon and lime, some chili seasoning (but not too spicy), plus the red and green peppers, onion, and cilantro. It was pretty darn tasty!
 
We just finished supper. It was calf liver smothered in onions and cream gravy mashed tators and black eyed peas. Will have desert at the cowboy church later

Just got home and I'm in a c****y mood. It's 103 out, it's 88 inside, the power is out and the smoke is almost the worst it's been since all the fires first started. We've only had two days without a horrible pall of smoke and my eyes, nose and throat are finally starting to give in. My office at work doesn't have an airconditioning duct run into it (the rest of the office does), so it was like a sauna in there today. And, my son's band decided to come over today for band practice, so I just said the heck with it and bought pizzas. I hate buying pizzas, but when I do I typically buy take n bake. Can't do that today because can't bake! Okay, rant's over. I'm gonna go grab me some of that pizza before it's all gone (with 5 teenage boys here, won't take long to go through 3 large pizzas). Hopefully by tomorrow I'll be back in the groove and ready to do some cooking (and hopefully the power will be back on!).

Thanks, happyhen. Unlike Tutter, we're not in any danger from the fires. We just seem to be where all the smoke gathers. Of course, that's pretty much all of No. Calif. at this point in time. :| Thank you for your prayers though - pray for me to get over my grumpy mood - my family will thank you!

Does anyone know if Tutter is okay ..did she have to evac? I hope she's alright ..and everyone else that's closer to the "hot" areas!

I hope she'll check in and let us know all is OK, but if we don't hear from her soon, I do have an email address, though I'm not sure how much good that would do. Yooo hoooo! Tuuuuutttteeeerrrrr. . .
 
Luckily this year we are far from the fires but the winds are blowiing the smoke here. I hope tutter and family are fine and she checks in soon.

I fixed sloppy joes last night, no tomato sauce so I had to improvise, turned out good though: Beef broth, ketchup, worcestershire sauce, red onion, garlic powder, chili powder, oregano, basil,cornstarch to thicken it.

Hey there! I came to post about dinner and saw my name! I'm sorry to have worried anyone.

We've had more than one fire jump their lines in the past 2 days. Currently with the red status of the weather (single digit humidity and hot temps.), the firefighters have been told to simply hold the fires, if they could. They did a good job, considering that we have 100% ignition where I am specifically (If a spark touches ground, the chances of it actually starting a fire is 100%. At the coast, ignition was 60%.)

But there was jumping of lines anyway, and it was way, way too close, so we spent the afternoon/evening working on a truck I have that's not been run in a long time, and doing more packing....just in case. I still don't know what we'd ever do about the critters.....

Then, too, we're on a very small generator currently, because of an overhaul to my system, and there's was a problem with it. In that process my laptop battery was drained. So I spent the night computerless, and almost dinnerless. I finally thought to have yogurt and some healthy (organic, no preservatives etc.) cheese puff-like chips.

But, today looks a little brighter (Well, not literally....there's no sun; the inversion layer's holding the smoke down on us.) and I am currently pressure cooking some chicken, peppers from the garden, onions etc. in order to make chicken tacos for dinner.

I figure that if I cook now, I can handle later, even if it reaches the predicted 109, just giving it a quick heating in order to have dinner.

Scrambled Egg, I used to make a sandwich called a "special" when I was a teen. It was mustard on bread, fried egg, and bacon. One day I made it for some boys who came over with some girls, and one, being the truthful, clueless person teen boys can sometimes be, said, when we served them with a flourish, "What's the special part?" lolol! So much for being confident!
