Here's the second recipe set in my Persian Cooking Series!

Persian Chicken

2 Onions
Juice of 4 Lemons
8 T Salt
Pepper (10 T)
1 pint of plain yogurt (Mountain High or other plain full fat yogurt)
Garlic Powder (10 T) (or use fresh equivalent)
Chicken pieces or game hens

Combine all ingredients, except chicken, in a food processor and blend to liquid form.

Place marinade in flat wide pan. Add chicken to be covered by marinade (or, if you prefer, put all in an extra large Ziplock freezer bag)

Marinate for 1 1/2 to 2 1/2 days.

BBQ chicken, dipping occasionally in the marinade before turning.

Discard the marinade.

Serve with Persian Rice

I'm thawing out the wild turkey my husband got during the fall hunting season. I would have cooked it fresh but we had to go out of town the day after he got it. This is the second wild turkey I've had to cook. The funny thing is we're going to the family Thanksgiving on Thursday, and I think I'm going to cook our own store-bought Turkey on Sunday maybe. I always like to do our own Thanksgiving at home because I love to cook the traditional meal. I think I'll just roast his wild turkey in the same old traditional way, and make a few simple side dishes.

Backyard Buddies... the Berbere spice blend could be used in place of the listed spices ...for the Spiced Butter.. but I've never done it cuz my Berbere is already ground, not whole ...so it's harder to drain out at the end of the process.

If you make your own Berbere (there are tons of recipes for it, if you google), then you could leave some whole for making your spiced butter

If I ever do write a cookbook, I'm going to need an editor that is also a chef, or vice versa, just so it can be understood

Dinner is one of the many dishes I prepared the other day ...maybe some pasta with that crocket'y pot sauce ..maybe not!

On second thought, I decided to skin the turkey and am cooking it in a huge stockpot on the stove. Hubby can have the meat for all different types of recipes. I hate cleaning my kitchen after dealing with big old wild turkeys. I am very picky about my kitchen being clean and sanitary. I will be cleaning and cleaning and cleaning my sinks and counter for a while yet.

Sounds like a big job, Chicky Joy! Let us know how it turned out!

Thanks again Annesa's Muse! I'll give that a try. I love cooking (and tasting) various ethnic foods so it'll be fun to try Ethiopian.

Tonight I've decided to make meatloaf! I know I said I'm not real bit on it, and I haven't made it in some time, but I decided that since you all are eating it, I might do so as well. I'll be serving it with Brussels sprouts and some kind of potato (not sure yet).

BB - thanks the the second recipe (I'll just say it's "Middle Eastern"

). DH usually tries anything, so I'm thinking that his co-worker must have been a bad cook.

I'm dining alone tonight since DH is working late. The first gardening catalogues arrived in today's mail, so I think I'm going to fix a large bowl of oatmeal while I plan next year's garden and try to ignore the sound of freezing rain (turning to snow later) outside.

Well, I'm not much for wild game. I don't know why but I never have been. I don't mind cooking it for my hubby but I don't usually eat more than a bite here and there.

Anyway, he just took the turkey out of the stockpot and started carving it. He had that look in his eye like the dad in "A Christmas Story." He loves turkey. He tried some and gave it a thumbs up. I cooked it pretty simply, with onions and spices. It's a pretty big bird but he plans to give some to his mom because she wants to try wild turkey.

Crawfish Casserole as the main dish. Baked Sweet Potatoes and
Green Beans on the side with a Green Salad and Rolls.
Sweet Tea with lemon to drink…And for dessert I am going to make a batch of Pralines.

Thanks!
The kitchen is all cleaned up, everything but the dishes anyway.

It was nice to finally use my stockpot. I forgot how big it is. I think it will be the perfect thing to use for brining our turkey for Sunday.

chicken fettucini, garlic bread, & corn, & biscuits topped with fresh strawberries & whipped cream for dessert. We had the missionaries over for dinner, ~ had to act like I knew how to cook ~ ;-D
