Sounds exhausting, Tutter! I hope today was more restful for you.

Tonight I'll be serving crusted tilapia with home made tartar sauce, buttered peas, and ??? Haven't yet figured out what else I'll serve with it.

Tonight we're having kind of a quick dinner. I'm fixing grilled chicken sandwiches two different ways. They are both fixed basically the same.... the first is grilled chicken seasoned with lemon pepper, Lowery's seasoning salt, and olive oil, it's topped off with cheddar cheese, bacon, and mayo. The second is basically the same except the seasoning on the chicken is just olive oil and Lowery's seasoning salt, Swiss cheese is used in place of cheddar and honey mustard instead of mayo.

Homemade patty melts, pickled peppers, and oven baked potato wedges.

I make patty melts by making a hamburger, then grilling some onions. I use rye bread, or faux rye, and on it put the grilled onions, the patty, then cheese. Close, butter bread, or brush with olive oil, or use part of each, and cook sandwiches in a pan. You can push them down with a spatula as they cook, or lightly weight them. Cook both sides until brown. Serve hot.

I really like tilapia. I usually make it in a pan with a little olive oil, salt, garlic, and paprika. Then, when it's cooked, I squeeze fresh lemon juice over, and serve with more lemon wedges. Simple, but tasty. I also really like it with tartar sauce, mmmmm!

Yes, I heard about the hail down there from my mother. It cooled off a lot here, too, and they are predicting rain through Memorial Day. We really need it!

Redfeathers, we do the same here. If someone's having a birthday, they get to choose the menu!

Want to send some of that dinner my way Wildsky? I have been sitting here trying to figure out what to make for dinner because Salamander is working and I had the day off. It would make her day if I made dinner for her.

I whipped these biscuits up in five minutes. It's half a meal. Just add a little Mater gravy or white gravy with some bacon or any type of meat. If I want fancy for dinner add a little garlic and cheddar cheese and make them smaller. If I want desert, use sweet milk instead of buttermilk and add a little sugar, Split in half and piled sugared fresh strawberries on half then add top of biscuit and more strawberries and whipped cream. Biscuit dough very versatile for any meal
