Well I sorta cheated tonight, as well. I took the leftover barbequed chicken from Memorial day, took all that off the bone and threw it in a pot with some rice. I made some spicy gravy and threw that in there, too.

The bbq chicken and the extra Tony's gave it an interesting taste. Wouldn't want it every day, but my belly is full right now!!!

Just to have something else with it, we had fresh cucumber and tomato "salad". It wasn't really, just cucumbers and tomatoes with Italian dressing and that Salad Toppers stuff. I COULD, now, eat THAT every day!
 
I'm making a soup tonight. It's very different, and very warming, but you have to like saurkraut. With another chilly/gloomy day (Still no more than drizzle in the rain dept.), it may be one of the last opportunities to make it this season. It's served with rye bread, and either horseradish, or mustard.

Here you go:

Saurkraut, (I like Cosmic Cabbage. lol!), rinsed if it's too salty
*Canned Tomatoes, 1-2 large cans, with juice, diced
Onion, thinly quartered
Meat, bite sized, as for stew.

Salt, to taste...be careful since there's saurkraut
Pepper, a little
Sugar, to taste. This isn't sweet, but you want to balance the acidity
Sour Salt (Citric Acid in rock or powder form.), should equal 1 or 1 1/2 pea sized pieces, or the same in powder. Start small, you can add more. There's really no substitute for this ingredient. Lemon juice isn't the same. To taste as it has for generations you'll need it, I'm afraid.
Garlic Powder/Granules, to taste (op)
Sweet Paprika, to taste (op)

*I usually add one large can tomatoes, with it's juice, and 1 small or medium can of tomato sauce. If you add the sauce, you'll probably add more water, as it's tomato based, but not like tomato soup.

Put everything in the pot with some water, and cook for a couple of hours.

Taste and adjust sour salt, sugar, and salt. Sometimes if it's too 'blah', it just needs a little salt to bring out the flavors, not more sour salt etc. Too much water could make it bland, but it should definitely have a soup consistency.

Serve with rye bread and horseradish or mustard. The way it's usually eaten, is that people take the meat out of their soup, and have it with the bread which is spread with horseradish or mustard.

Also, some people put a small bowl in the middle of the table. In it, put about 1/2 cup of the soup liquid, and a few red pepper flakes. Then, whoever wants a little "bite" to their soup, can add a little to their own bowl.

It is a type of borscht, actually! This recipe, minus the canned conveniences, of course, came to this country with my step-grandmother's parents.

Well, I don't actually use beef, but very close, buffalo. (American bison.) But the recipe calls for beef.

I got my sour salt at the supermarket. It lasts so long that I'd had mine for over 20 years before I needed more! (It doesn't go bad.) What disappointed me, was only being able to get powdered, rather than rock, the last time out. Now my store doesn't have either, but this is a small town, and I imagine that other people would have less trouble.

You may have to look in the ethnic section, or, ask the store manager.

Fun! We love borscht and I've made it several times! I've never had it sans the beets, but this will be fun to try as well. Is this more Polish than Russian in origin? Thanks for the sour salt info!

I am chopping up a leftover pork roast, browning a sweet onion, making rice, mixing that together with soy sauce ans stiring in about 6 beaten eggs until they get done and having easy pork fried rice, lol!!

Have you ever made cold borscht with the sour cream whipped in, and boiled potatoes? Good for hot weather!

I notice so many of you have such great recipes and I like looking at this thread. unfortunately its getting late and I can not look at 139 pages for something to cook. I am FLAT BROKE and have tons of ground hamburger meat in the freezer. Anyone have any suggestions for dinner? Simple ground meat recipe for the poor girl over here.
