Oh yes! Hubby brought me home Subway. I do love their bread, their sandwiches,....uhmmm....I like it. And....no ulterior motive....(whispering) that I"ve noticed so far, I think he's got something to tell me though...

We just bought a grill so I threw salmon, zucchini and eggplant on it. I've never grilled before so I was happy when the salmon and zucchini came out well. The eggplant not so much.

DH has been duly informed that he's in for a grand experiment this summer

. Whatever's on sale is what we're grillin'.

Since payday is tomorrow, it was spaghetti aglio-olio (garlic oil, bread crumbs, parmesan and fresh parsley) and a mixed salad dressed with aged balsamic tonight. Home made olive oil bread and a lemon pudding cake for dessert.

Oh, I've not eaten so well today, unless starches and caffeine can be considered food.

DS had a band performance at Disneyland today and after they were done, they got to enjoy the park. We let the kids run off and I and a another mom sat in a nice shady spot and chatted. Lessee. . . . We shared a big pretzel for lunch (I had tea, she had coffee) then for snack we bought a HUGE piece of chocolate cake (and more coffee). We ate some, shared it with 4 growing boys, and I brought home the rest. Hubby had some, and there's still quite a bit left.

So, figuring I needed to eat some real food, I heated up various leftovers for dinner and set them in the middle of the table. So, I had a proper balanced dinner - meat, veggie, more starches (ugh) - but without a lot of effort. Hey, it was hard work to sit on my rear in the shade all day!

Our kids and their friends love these and they're a nice change from hotdogs on the bonfire:

Thousand fold dinners

1- 2 frozen hamburger patties per person
sliced potatoes
sliced carrots
chopped onions
sliced green peppers, if you want
salt and pepper

Everyone makes their own; put your patty in a section of tinfoil about 6x6 inches or so, then pile whatever you want on top of above ingredients. Just make sure you have enough room to securely seal the tinfoil. Then, put about a tbsp of water in there too, and start rolling the tinfoil over all the food. Fold, fold, fold, til you can't anymore. Put the tinfoil package containing your dinner in the coals, and leave it for about 15 minutes, depending on how much stuff is in there. No need to turn, but package will be hot, so you need tongs to take it out.

Banana boats for dessert

Remove a section of peel from a banana, and slice your banana in the same area. Fill the hole in the banana with chocolate and marshmallows. Wrap in foil and put on the coals for ten minutes or so, use your judgment.

We're working like demons in the garden again. So I'm using the leftover spaghetti sauce from the other day to make an easy dinner of tossed spaghetti, green salad, garlic toast and lemonade.

Hi, Yogi!

I've missed seeing you here. I hope your hard work is the satisfying kind. Yummy meal you had there!

So, Parsonswife, what did dh have up his sleeve last night?
smile.png

Lengel, congratulations on your grill! There's probably nothing you can't make on it, as it seems your dh is about to find out!

HappyHen, that's sounds like a good end-of-the-month meal to me!

Their Other Mother, that's excellent! I'll bet their wasn't a bit left, either!

Backyard Buddies, I'm not telling my son about your day. He thinks carbs are a main food group! lol! I have to admit, I love those big pretzels. I never could get through San Francisco without stopping at a cart to get one! (And another for a dungeness crab....)

Thanks for the recipes, Chicknmania! The next time we grill, we're having those bananas!

Tonights fine dining consisted of:

Bacon Cheeseburger Hamburger Helper topped with green onions and sour cream.
Cesar Salad
Garlic Cheese Toast
Sweet Tea

To Tutter, Scrambledegg, 2dream, redfeathers and all:

Thanks to each of you for the kind words. I have been off and on here but not to much to say as of late. Lots of drama going on in my life and didn't want to burden anyone with it. As of yesterday it is now ended for a while at least. Hopefully we can get our lives back in order.

Just a brief explanation for all of you because we all have our crosses to carry:

My only sister, 60 years old, is terminally ill. She is homeless as a result of the last hurricane. Her health declined rapidly from stress, over worked and mistreatment by people in her life.
I got her out of the hospital ICU and brought her to my home for care 3 weeks ago. The docs say she might have 6 months to a year left at best and should be in a care center for 24 hour a day care. She has 20% heart efficiency and less than 15% lung capacity. Surgery is not an option at all.
We finally got her admitted to a care center after 3 weeks of caring for her here.

With that said, thanks to all of you for your loving and caring friendship. You all are the bright spot in my life daily. I dearly love each and every one of you for the people that you are. God Bless all.

Dear Yogi,

I'm so sorry for the difficult time you and your family are going through. I, too, have only one sister.

You all have my family's prayers for what you are facing. (((Hug!)))

Write any time; I'm here if you need me, or think of anything that I can do for you and your family.
