Tonight was chicken and rice casserole. with all the fixings.

Supper tomorrow I'm planning on B-B-Q....steaks....I'm thinking about roasting my corn on the cob in the coals....
Anyone with a good recipe for that?
I like to roast my taters and onions in the coals....Wash, dice, and salt & pepper....wrap in heavy duty aluminum foil and cook in coals... 'bout 40 minutes....UHmmmmm

Every single one of us here will be thinking of you and your family. I know it's very tough to be faced with a situation such as yours, and I think you're a very strong person. Many, many prayers coming from Alex. tonight!!!


Shoot, I don't even feel like posting what we had for supper, but I guess since that's the reason I came here, I will!

Tonight is DH's birthday, so we did a little cookout:

Brisket
Potato salad
Green salad
Homemade mac and cheese (YES!!!)
Baked beans

NOW comes the hard part. Getting all these people out of the pool to go home!!!
 
Parsonswife, as long as you already know about cooking in the coals, then you can probably do corn without a problem. We usually do this on the edges on the barbeque, but I think it will be fine as long as it's watched well.

Pull back husks and de-silk. Oil or butter, and add seasonings if you wish. Pull the husks back into place. Now wrap tightly in heavy foil. I always turn the square on end, so it looks like a diamond, and roll that way, starting at the little end nearest you, and bringing the 2 side pieces in about halfway through the rolling, so it's like rolling a burrito, cabbage roll, or eggroll. Hmmmm, I'm not sure that was clear at all..... Some people leave the husks off, but I think it gives extra protection, and tastes better. Maybe the latter is my imagination, but that was what we thought a few years ago when we did some with, and some without, side by side.

I'm going to have Beef and Broccoli (Oriental) with rice. And since it's Sunday, and I'm making less of a meal than I normally would, I'm going to make it up to the guys by having strawberry shortcake. The cakes are just out of the oven, and the strawberries have been picked and fixed.

Dh's tamed wild strawberries (We took wild strawberries from the wood edges, and put them in a bed. They have retained their wild strawberry flavor, but the fruit has become larger.) have had fruit all over them, and they are really extra special.

That sounds good, Scrambled Egg! Yogi's had me wanting cornbread, so I made some last week, just because. Ds took it to work with his lunch, I ate it with food, but also just snacked on it. Mmmmm!

I orginally was going to make Redfeathers beans, but I had to work yesterday - taking about 20 kids on a fishing trip (I know rough job, but someone's got to do it). Some of the guys caught some extra fish, so for dinner tonight -

Fresh Kokanee Salmon & Rainbow Trout grilled with a little butter, lemon, garlic and parsley.
Corn on the cob
Green Salad
Watermelon
and for dessert -- creme brulee (DS has been begging me to make it for a few weeks now)

Yogi, So sorry to hear all that is going on. I will keep you in my thoughts and prayers. I understand a lot of what you have had to deal with since my own life was a little topsy turvy not to long ago. Just hang tight.

I'm switching to summer-mode with our food.

Monday's are usually for soup in the late fall, winter and early spring, but I think I'm switching that to what I call, 'dinner salads'...starting today.

The base is lettuce, or cabbage (depending on the personal preference of whoever's eating.)

Then everyone chooses what they want from the following....at least these are the offerings tonight:

Grilled chicken strips, mozzerella cheese strips, hard boiled egg wedges, broccoli, grape tomatoes, red bell pepper, black olives, radishes, onion, and pickled beets.

I'll be having a roasted red bell pepper vinaigrette on mine, but there's also a creamy dressing available, and we're having it with some bread that I made this morning.
