Hey Grandpa, What's For Supper?

Last night we had tacos and spanish rice.
Tonite we will be having an italian casserole with homemade sauce, mozzerella, onions, hamburger and mostaccioli.
This week we will be starting our summer meals. We mainly bbq and do crockpot, or cold meals. Unfortunately DH doesn't like many types of salad. He doesn't like"rabbit food" No lettuce or tomatoes for him! I do make lots of other types of salads in the summer though. His favorites are my tortalini salads and my smoked salmon salads. We have lots of finger food and dip type dinners also.

Maybe I'll make some garlic bread also, I have to make a loaf of bread anyway, what's two??

We are having black bean soup with stewed tomato, chopped onion and garlic, lots of seasonings, and I tossed in a rooster we processed last week. It's been boiling away and the meat came off the bone and is really tasty, the only drawback is cooking with black beans turned the meat black. lol I'll make biscuits or french bread to go with it.
 
I love black beans and rice so I bet that soup of Christy's is yummy!! That bananas foster Lizardz made sounds darn good too!!! We are having the leftovers of the chicken and pastry tonight. It was a really good batch so that will be a nice supper and we should be finished with all that too.

Tonight is a ground meat version of stroganoff, with asparagus....it is really good here right now.

I cook meat, onions, and portobello mushrooms pieces, using some garlic, and a good amount of sweet paprika. Eventually I add sour cream, heat through, and serve over noodles or rice. Everyone's running late, so I don't know which it will be tonight, but I'd better take a vote and get either the rice on, or the pasta water!

Scrambled Egg, don't you love leftover's, though? I make sure to make enough for either another dinner, or minimum, someone's lunch.

I used up leftovers tonight!

The other day, we had a brisket on the grill, so earlier today, I chopped up the rest of that and threw it in the crock pot with bbq sauce and some water, so we're having bbq sandwiches.

I did some fries and also (just cause I was DYING for a taste), cooked down some of my first squash out of the garden with some sugar in it....mmmmm.....
 
Tonight is an asparagus-red bell pepper- ginger-chicken stir fry over Jasmine rice. Something kind of big brewing here tonight (shhhh, if you know. I'll post it tomorrow if it happens.) so cooking time is a little limited.

TT, it sounds like a good meal, though I'm just not a pie-in-the-face kinda' gal! lol! Good for him that he doesn't mind!

Amystours, the BBQ'd meat sounds good to me, but how do you make the squash? I've never had sugar in summer squash before!

It's nothing at all, really. All I did was slice the squash, put it in a skillet with a tiny amount of water (basically to keep it from sticking or burning on the bottom), cook it down till it's a little bit tender, then I just sprinkle about a tea/table spoon of sugar over the top, depending on your tastes. Stir that up let it cook for a few more minutes, and there ya go!

I like squash just simply cooked down, but my MIL showed me how to add sugar, and it's great, actually! I always throw a little salt and pepper on it, anyway.

JUST FOR THE RECORD: I still put SALT on my grits!!!!
 
Have been working all day (after feeding the animals) on a Memory Scrapbook for my MIL's 90th birthday party which is this weekend, so another quick and easy meal -
Lentils w/orchettia and goat cheese
Garlic Bread
Green Salad
Deliciously Easy Cake (also known as Dump Cake) for
dessert.
Everyone else's dinners sound so yummy, too. Can't wait til this party is over so I can try some of your ideas! Well, break's over, back to work!

today is DGD's last day of school, it has been very busy around here. Tonite is her 2nd favorite, bbq chicken(1st is chicken and dumplings). Probably mac n cheese with it. I made her a special cake we started on last night. It was a cake made to look like a medal. She got a medal Tuesday for excellent attendance(she missed 2 days) and one for being on the Principals Honor Roll three times this year. She missed the fourth by 1/2 a grade, so she only made A Honor Roll that time. So we will have more cake for dessert and probably homemade vanilla brownie ice cream with it!
