TY prisyy and everyone else for posting the BBQ recipes....Gonna give them a try tomorrow when I make pulled pork sandwiches. I'll probably mix and match from every ones recipes and see what I get...
I think it's a shame I've been buying bbq sauce all these years...these recipes are easy and obviously the taste is going to be "knock your sox off" good. Thank you everyone!
Yogi, I've never heard of Slap - Ya - MaMa cajun spice, but I bet it's good stuff. I'm from the Pacific Northwest, we don't get those fun spices here unless we mix them ourselves or go to a specialty store. I should have been born in the South.
My husband and I love all meat chili with a hearty kick. My kids do not. So don't fuss at me about chili being all meat. This isn't Texas. It is Virginia. LOL
This is my compromise chili.
I cook dried beans for it. In a pinch I use Hanover brand canned beans.
1 jumbo onion, dices.
8 cloves of garlic, finely chopped
2 cans black beans
2 cans light red kindney beans
2 cans dark red kidney beans
2 cans pinto beans
1 lg can tomato sauce
1 lg can diced tomatoes with green chilies
1 can tomato paste
3lbs ground beef (I use 75/25% because the fat makes the flavor)
Chilli powder to taste.
In a skillet saute the onions and garlic in olive oil until the onions are clear. (Sometimes I add celery, finely grated carrot and bell pepper).
Move it over into your large stock pot.
Add all the canned beans and tomatoes.
Bring to low simmer.
Brown off the ground beef.
Add it to the bean mixture.
Add 1/4 chili powder (taste it you might want more or less).
Stir well.
Cover and simmer on low for a couple hours.
If it starts to get too thick add a bottle beer instead of water to the pot.
Serve with cornbread, cheese, sour cream and thinly sliced green onions. a salad can be served along side it but not tonight. Not in the mood for it. LOL
All of the different colored beans really made a festive and colorful bowl.
Here's Justin Wilson's BBQ Sauce that I got from his show many years ago:
1/3 cup olive oil
1 chopped onion
1/3 cup chopped celery
1/3 cup chopped green pepper
2 cloves garlic, minced
1 8-oz. bottle A-1 Steak Sauce
1 cup ketchup
1/4 tsp. chili powder
1/2 cup whiskey
1/4 cup parsley flakes
Saute onion, garlic, celery and pepper in oil until onion is transparent. Add remaining ingredients and simmer 30 minutes.
Also, if you're lucky enough to have a Trader Joe's near you, their BBQ sauce is wonderful and it doesn't have high fructose corn syrup like most commercial brands.

No, No, No mam! Don't waste your money on store bought barbeque sauce. Make your own to suit your taste.
Cajun spices are nothing more than a mix and blend of various spices. So much of it is "trial and error" and personal taste. I'm not into anything that is overly hot with pepper. We enjoy a healthy balance of peppers but not to the point that it is uncomfortable to eat.
I probably should develop my own distribution center for them. I sent a case box of various cajun spices to a friend in Omaha just before the holidays. She will never need spices again.
My son developed his own "rib rub" that is excellent. But of course, Dad had to modify it slightly just to make sure he got it right.

I woke up this morning to 3 inches of snow...with more on the way. I said to myself...." Self, looks like a good tater soup day" So....I put a small ham in the oven....made a big pot of tater soup, and some home made bread! yum yum! Now THAT will warm yer innards!
We've got 3 inches of snow, too. We're having potato corn chowder with crumbled bacon and cheese on top. I would put green onions, but don't have any. I'll probably make some corn muffins (not sweet) to go with and maybe a green salad.
I was off the hook tonight!! My son went to his girlfriends house and ate with her so hubby took me to Kyoto Express and we had hibachi shrimp and teriyaki chicken with rice...globs of that white sauce and as much of the ginger sauce...yummy!!!!!!!!!!!

Oh but Darlene, alligator is GOOD... little deep-fried chunks of the tail meat are moist and, what to call it, I'd have to say *bouncy* (not chewy, just, you know, bouncy, but in a good way
). And sweet tasting, not muddy like frog legs. (I have had frog legs a number of times and all I can say is that if people think they taste like chicken they REALLY need to be buying a better grade of chicken!
I am the person that gags over deer meat!! I could not eat alligator, even thinking of what it must smell like is not appealing to my stomach..which is crammed full of good kyotos food, lol!! I am not a picky eater other not eating deer, rabbit, quail, squirrel.....alligator....did I mention alligator....
