I'm on round two of the big pack o' steaks that I bought for $11. Last night was grilled steaks. Tonight is beef stew (with carrots, celery, onion, potato, broth and a splash of red wine, all seasoned up with parsley, garlic, and rosemary), salad with heirloom tomatoes, and French bread. I'm making the beef stew in the crockpot and that thing is filled to the brim, so I'm thinking that this will be more than one meal. And, I've still got more in the fridge for the next concoction I'm going to come up with. I'm on a quest to see just how many servings I can get out of that $11.

ive only done brisket and pork shoulders,, im new to it too,lol, ive never even thought about it up north,, but down here ya GOT TO! lol
ive even done burgers after the brisket is done,,,,, theres a few tricks to making it taste right,, i dont like the STRONG smoke flavor,,, ill write some more in a few minutes,,, gotta take the parrot i caught in my tree to the van so the wifers can get him a cage, and find out what kind he is

heres what i do for a 12lbs brisket,,,,
soak the wood chips overnight ,,while doing that, i make a dry rub and rub the meat like i LOVE it heh,, and let that sit in the fridge overnight. next morning start the smoker ( i have a HUGE 1 so it may not take so long as i do) and let the smoker heat up for a couple hours till it gets to 250 degrees,, then BEFORE i put the meat in, i throw the soaked chips in,,this will bring the temp. down, so once its back up and going good, throw the meat on, in 2 hour i flip it,, then 2 hours later i wrap it good..REAL good in foil, then let it cook another 5 hours,( theres NO need to use the smoke chips after wrapping, just plain ole wood will do) after its cooked, take out and let sit for at least an hour. while its sitting i make my sauce,( 2 cans of cranberry sauce(gelled not whole crans) and 1 bottle of chili sauce, a glunk of lemon juice, and simmer it till everything is a sauce consistency),,, then i PIG OUT!
ive never heard of brisket till i got down here,,i never knew cow butt tasted so good

BamaChicken - you sure those are biscuits in that pic? Those things are so light and fluffy I thought they were clouds! My biscuits aren't half that light.

I made pizzas tonight. Pepperoni, Italian sausage, bell peppers, onions, mushrooms and black olives.
 
I've been both busy and lazy as of late and have not posted on my thread for some time. It's time I catch up rather than just read. Right?

This morning I made a pan of those baking powder, cathead biscuits like BamaChicken showed a pic of. Man those things will knock your socks off. Had to put some mayhaw jelly on them just to temper them down some.

So tonight I cooked a big ole pot of butter beans, turnip greens, beef stew w/carrots & potatoes, rice and corn bread. Talk about some comfort food.

Ugh, if you think that beef brisket is cow's butt then you've got that cow turned around backwards or something.

Later we'll get into some serious smoking recipes and I'll introduce you guys to the cajun microwave. You'll love it.
 
I roasted a turkey yesterday and nobody was here to eat it except me and 2yr old GD and she didn't feel like eating and gave half of it to the dog.

I had to cook it cause I unthawed it.DD went to a New kids on the block concert and DH was at a conference.
But good thing is I don't have to cook tonight, and tomorrow its homemade turkey pot pie

Tonight is Breakfast for Dinner, so it'll be a break from the steak-fest we've been enjoying here. Stay tuned for tomorrow's update.
