Today, my step dad made homemade pizza from whole wheat pizza dough, seasonings, Kraft shredded cheese, and spaghetti sauce(we had no pizza sauce

) Little sis helped make it too. And we had cheese curls on the side.

I had my foot operated on today- just a minor surgery. Came home and made butternut squash soup (squash and other stuff from my garden). I put some orange juice, garlic and red pepper in it. It smells great! Just had to have soup! The anesthesia is wearing off and I will need it! Hope all poultry will be nice to me tonight and not make me chase them ! My husband is going to grill some turkey burgers. We are having a hard freeze tonight.

I turned the Greek pasta and beef into italian. We didn;t have the cinnamon or nutmeg, so I used crushed red peppers and seasoned salt. that recipe is AWESOME!!! It took some work to get everything lined up but once I know it better, it will be a piece of cake!!! It was delish!!!!

Well, we had a change of plan for dinner. Instead of going over to the parent's for pork roast, I am roasting a whole red snapper with garlic and lime, and making pan fried potatoes with bell peppers and onions on the side.
 
My mom made the BEST roast beef last night. She goes to this special deli when she has visitors...like my sister and her family came for a visit...and it is already rubbed down with spices and it is the best best best roast one could ever have.

served with potatoes, peas, and awesome salad and crunchy bread.
 
PDC - I love etoufee and yours is making my mouth water! It's hard to get crawfish up here, so mostly I'm stuck making shrimp or chicken. Still good!

I had the energy tonight to butterfly out a pork roast, stuffed it with spinach, garlic, breadcrumbs, pancetta and parmesan, rolled, tied and roasted, served with green beans and roasted garlic mashed potatoes.

DH did the clean-up.
 
Wow! You all have had some yummy dinners! I'm jealous!

I spent my afternoon uploading recipes for our church cookbook which left me no time to cook dinner for my family. Somehow that just seems wrong!

Anyway, hubby ran out to Del Taco and picked up some fast food Mexican.

The biggest difference between this one and mine is that I don't marinate the chicken. I just simmer the heck out of it for about an hour. Additionally, mine has onions in it. The peppercorns and bay leaves are replaced with a half teaspoon of pickling spice. It's very simple to make and is served with steamed rice. It's a bit on the tangy side, so if you have bland eaters, they may not like it.

As for us, dinner tonight was pretty simple. It was just burger patties, baked potato, and corn.
