Hey Grandpa, What's For Supper?

I started a pot roast at two o'clock this afternoon. I basted that sucker for hours, served it with fresh homemade bread and salad. My youngest child held up a piece of it and said "poop mommy!" . The other two agreed with him, and so the dog got three plates worth of pot roast. Moral of the story: Today was my poop pot roast day

Menageriemama - Sorry to hear that the kids rejected the pot roast untasted. Can you recreate it into a soup of some kind, perhaps one with beans or something that'll hide the poopy looking meat?

Slightly Cracked - How was the meatloaf? I also make mine with a mixture of meat. I think that's the best way.
 
Meatloaf was good, family liked it but I think I like it better with all beef.

Menageriemama- you could always chop up the roast and add BBQ sauce and serve on buns. That way the poopy meat is disguised.

pineapple upsidedown cake made in my cast iron skillet

Had some friends over for dinner and we had a great time. She is a photographer and we laughed all night long with her crazy wedding stories!

I cheat!! I used to go through the whole scratch thing but recently found a boxed Pineapple cake (Betty Crocker I think) that is the best I've ever tasted.

I melt 1/2 cup real sweet cream butter (1 stick) in a 12" cast iron skillet
add 1 Cup packed brown sugar - spread all over the skillet
turn off the fire, add my sliced pineapple rings with marachino cherries in the holes and pour the batter over top. Bake it at 350 for about 35 / 40 minutes.
let it set for about 5 minutes then turn it out on a cake plate. It is the best ever and everyone raves over it. I think I'll have another piece right now!
 
I've had the flu for the last few days so I really haven't been cooking anything very appetizing. DGD made fishsticks and corn for her and DH last night while I made myself a big bowl of malt o meal!

Tonight we are having out of town friends over for the night. I took beef chuck steaks out of the freezer. DH will bbq them (Ihope) I am trying to decide between a pasta casserole or mashed potato casserole(all I have right now are instant), I'm not sure what kind of veggies. I think I'll make some rolls also. We have homemade vanilla ice cream for dessert.

Since I've been sick I will spend the day cleaning, at least DGD only has a half day of school today.

I have a dentist appt tomorrow morning. I am not to excited about that either! Then I have lunch plans with a friend. As of right now I can't imagine leaving my couch let alone my house! I hope you feel better real soon! This is no fun. I can't imagine having company right now. Bless your heart! I do think that homemade ice cream should make you feel better though!

DH asked me on monday if there was anything he could do for me. I asked for his famous homemade ice cream. He must have thought I was kidding because I havn't seen any yet!

Monica.. I hope you feel better soon. That "flu bug" thing is bad news.

Slightly.. you can make some YUMMY eggrolls with that ground pork ...or your own wontons (for soup or fried/appetizers) ..or add some of it to burgers/kebabs and grill them (GF grill works great, too).

I don't eat pork anymore, but the recipes I mentioned call for it ..and I just substitute ground turkey, since it's close.

Now, all this talk of meatloaf has me wondering if I can get it past the DH. Hmmm...

I have some fingerling potatoes in there ..I've been wanting to roast those with some fresh garlic and parsley. And I have some Arugula.. could saute that with some EVOO and sea salt... this could work!

Thank you all for your well wishes.

Decided on fettucinni, no green onions here though, so I'll put in sweet onions, black olives, shrooms and corn, haven't decided on what type of rolls yet, that will have to wait until my next break.

Meatloaf sounds great! DH loves these little mini ones I make in muffin tins. I'm not crazy about them though.
