Redfeathers! so sorry for you not escaping the crunch! Cabbage and noodles, however is fine food, and my husband's favorite. We actually have it every Christmas Eve and if I omitted it my son would kill me also! Peasant food is the best, and what I grew up on. Are you Eastern European?
 
A lot of the peasant food is coming back..they have even gotten to where it's served in high dollar resteraunts. Give me boiled cabbage any day of the week!
There was a story the other day, I only caught part of it, but somewhere along the lines of, that a lot of British people don't know how to cook on the cheap, so they are going to where they eat out fast food a lot more then they ever have.

BB-We may pass eachother on the way, I'm coming to your house! DH P****D me off, I don't fell like cooking for him tonight(I will of course)! Now I don't feel like making the casserole, so I made some instant potatoes and will fry up some potato patties. I also put on some hamburger buns for the salmon patties. If DGD and I didn't also have to eat, it would be a cold dark kitchen tonight!

This economy is kicking everyone's butts. The sharing of ideas, tips, recipes, and support we get here helps ease our way into this "new" normal.

Redfeathers - sorry for the cut in hours. My DH is retired and we now live on a fixed income that was fixed for 10 years ago!

It's pretty scary, I'm not sure what we are going to do...but we know we are not alone, this is happening everywhere to so many families. We will figure it out I suppose.

DH came in today and said, "Hon.. I have good news and bad news ..which do you want? Bad news is, I just got bumped to swings cuz they eliminated graves.. his shift... and I will have to take a cut in pay, to move to swing cuz I can't bump the day guy off ..his seniority is better. Good news is, I'll be home nights." For about 9 of our 11 years of marriage, I have slept alone 5 or more nights of the week. I guess it's something.

On a lighter note.. I made a migraine friendly version of the Sour cream Chicken tonight cuz when I mentioned the new recipe to DH, his face lit up

I browned a large breast half in oil with salt n' pepper, first. When it was golden on both sides, I removed it to the board and cut it up the middle, long ways ..like fileting fish... and then put it back in the pan to brown the "middle" sides. Once it was almost done on those sides, I tossed in half of an onion, chopped ...one medium sized portobello mushroom, chopped ..and a couple cloves of garlic, chopped fine. I splashed a little more oil in there, too.

When the chicken was done all over, I took it back to the board and sliced it thin and across the grain... then returned it to the mix in the pan again. Once the onions and everything was getting golden, I added some corn starch and a quarter of a Knorr chicken bouillion (I already had sea salt and pepper, so didn't want to overwhelm it.. just add some flavor). Stirred that around a bit and added two big spoonfuls of sour cream and about half pint of heavy cream... stirring all the while.

I served this over Campanelle noodles and had petit peas sauteed in a little "bacon" grease. (We eat beef bacon.. but it's the same flavor in the end.)


I skipped the baking step.. and the MSG in the prepared soup.. and it was really, really good still. Thank you again, Backyard Buddies!

I'm sorry to hear that! That is a huge pay cut and to now have a new car payment on top of that..ugh...I wish you guys the best...it's terrible to work for a company for 20 years like my hubby and have this happen...but I know that sometimes these bad things happen for a reason and something better comes of it. I hope it does for you as well.
 
Yes ma'am, everything happens for a reason, and we just.... adjust. More ground beef, less steak, more blankets, less heat. I an VERY thankful our girls only cost us about $15 every two months. they are worth the time and energy.

Tomorrow is steak - we had some frozen from a sale
