I am frying fish, fresh flouder fillet. They will be layered on a toasted baget with tartar sauce, lettuce and tomato with a heavy squeeze of fresh lemon juice. I have fries on the side. Coleslaw. Carrot cake. Iced tea.

Like Laura, I made a pork roast but made mine in to barbeque for sandwiches. Not sure about tonight, have some hamburger meat in the frig so I'll do something with that..only hae one hoover in the house now, my daughter went back to school yesterday, lol!

Tomato, Sausage and Egglplant Soup with homemade garlic bread...

Tomato, Sausage & Eggplant Soup

Yield: 3 qts.

4 oz. olive oil
½ medium eggplant (unpeeled) cut into ½” cubes
½ tea. Salt

2 tbsp.chopped garlic
1/2 large Spanish onion, small dice
¼ bulb fresh fennel (1/4” dice)
2 tea. Fennel
2 bay leaves
2 tea. Dried basil
1 tea. Dried thyme

1 ¼ lb sweet Italian Sausage Meat

2 cup chicken stock
3 cup tomato puree
3 cups whole peeled tomatoes, coarsely chopped, with their juice
¼ cup sugar
2 tea. Black pepper

1. Heat olive oil in sauce pan over medium heat, add eggplant and salt, sauté until tender. Transfer to a bowl
2. Pour any remaining oil into a soup pot, add garlic, brown lightly, then add onion and sauté until clear
3. Add the fresh fennel, the herbs and spices and cook for 2 minutes
4. Add the sausage and sauté until cooked, breaking up in small pieces as you cook it.
5. Add the chicken stock, tomato puree, chopped tomatoes, eggplant, sugar and pepper. Stir well, bring to a simmer, and reduce to low and let simmer for an additional 20 minutes.
6. Check for seasoning and consistency, if too thick you may add more chicken stock.

I used large cans 28/29 oz. cans of tomatoes, and just adjusted everything up a bit! I also used already chopped tomatoes, and the whole eggplant, I didn't have any use for the leftover half!

Oooh! I wanna join this thread. I love to cook - and I come from good cooking genes, too! (one grandma wrote recipes for cookbooks and the other one owned and operated a catering company in Hollywood from the 1920s - 1960.)

OK, here's what's for dinner tonight. . .

Salad

Grilled Cedar Plank Salmon with sun dried tomatoes - from the Kraft website:

(fish is marinating right now and the plank is soaking)

White and wild rice pilaf

Green beans

Milk for the kids, sauvignon blanc for hubby and I.

I'm looking forward to learning some new recipes from you all!
 
I'm getting over the worst case of food poisoning I have ever had. We went out for chinese food yesterday...I think everyone gets to make their own dinner tonight.... I might make some soup but that's about it.
 
Nothin' fancy for dinner tonight. I need to do a fast dinner plus we're trying to eat healthy at least once in a while.

We're having:

Grilled potatoes stuffed with bacon, LF cheese, LF sour cream and green onions.
(Simply zap the potatoes in the microwave, rub with oil, roll in sea salt or spices if desired, then toss them on the grill to crisp up). Fill with your favorite potato goodies.

Spinach salad

If I can motivate myself, I may toss together a bread pudding with whiskey sauce for dessert. (believe it or not, I do that as LF as possible, as well.)

I'm happy to share this recipe. It's a nice solid cake that isn't over sweet like some cakes

Chocolate Mayo Cake:

3 cups flour
1 1/2 cups sugar
1/3 cup Cocoa powder
2 1/4 t. Baking Powder
1 1/2 t. Baking Soda
1 1/2 Cup Mayo
1 1/2 cup water
1 1/2 t. vanilla

Blend all ingredients well, pour into greased and floured cake pans. Bake on 350 oven for 30 minutes.

Frosting:

1/4 cup Crisco
1/2 Cup Cocoa
1/4 t. Salt
1/3 Cup Milk
1 1/2 t. Vanilla
3 1/2 Powdered sugar.

I add two teaspoons or orange zest for a chocolate orange frosting.

after cake is frosted, I chill mine for a few hours, this cake is wonderful cold with a scoop of ice cream.
 
Dreamy!!! Yogi!!! Feathers!! Cheryl!!! Brahma!!!Where have all my pals been?!! Never seem to catch ya'll on the board anymore!! Are ya'll packed for our road trip???!!!! I can feed you supper leftovers, we ahve beef & cheese quesadillas (mine & hubbys had onions, son said no way to those) and topped with salsa. Not too shabby!
