I think a recipe thread would be great. I have missed some people keep talking about and would love to have.

Cuban sandwich-
Mojo sauce-
3T. lemon juice
1T. water
3T. olive oil
3T.chopped parsley
3/4t..minced garlic
1t.dried oregano
1/2t. salt

4 cuban or portuguese rolls, cut in half
8 slices(40z.) virginia ham
16 slices(12oz.)roast pork
8 slices(4oz.) genoa salami
4 slices(4oz.) swiss cheese


Put sauce ing. in jar, cover shake till blended
For each sandwich-Drizzle 1T. sauce on bottom half of roll. Top with 2 slices each ham,pork,salami, cheese. Drizzle with 1T. sauce, cover with top of bun.

Let me know how this is if you try it.I have had the recipe for several years, we don't ever have enough roast pork leftover to try it. I will have to make a roast just for this I think.

Our dinner tonite??? Taquitos, maybe it is HOT here today!!

I love raiding the fridge for leftovers. I like to challenge myself to find ways to create the leftovers into something else that looks entirely different than what it was originally.

Tonight I made a pot roast with an herb rub along with a red wine reduction and lots of root veggies. I tried a new roll recipe I found at Allrecipes that the family loved. It was called Cornish Splits and for a yeast roll was pretty darn quick to make. The only thing the family said is that the recipe needed more salt (our butter is unsalted). I was asked to please, please make those rolls again soon. Here's the recipe:

fried taters
corn on the cob (some of my last)
fried okra (last bag)
sweet iced tea
& cornflake delights for dessert

Oh, and using the last jar of my homemade pepper sauce...
