We are having mandarin ginger chicken on rice with zuchini boats (pretty sure I got the zuchini recipe here) I am excited to try it on the family! Backyard buddies, that Sour cream chicken over egg noodles sound great! Now I am going to check out the chicken mushroom link!
 
I made a french olive loaf yesterday ....so today, I have to bake some kind of pasta ..just have to! Or maybe something mediterranean..


The loaf came out oddly shaped ..cuz I let the machine bake it, I guess ...didn't want to heat up the whole house with the oven going ..but the bread is YUMMY! I even used a variety of olives this time

Now I'm trying to decide what sort of goodie to bake so I can warm the house up a little bit. Brrrrrr, 60 degrees and rainy.

Backyard Buddies: Thanks for the link!! They are crazy looking things, huh? The orange color is astonishing. I think I will slowly simmer it tomorrow with some butter, chicken stock and then thicken it with a roux and throw in some fresh herbs. It should be a good enough sauce to merit pulling out the pasta machine

Now, what to do with all of the beets I got in the box today...
 
Tonight is Build-a-Burger night, basically you top your own burger with the various toppings that I feel like setting out. Tonight was Swiss, American or pepperJack cheeses, sauteed onions and mushrooms, bacon, lettuce, tomatoes, onion slices, pickles, ketchup, mustard and mayo. Grilled corn on the cob, potato chips and brownie sundaes rounded it out.

Backyard Buddies, your DD's birthday dinner sounded every bit as wonderful as your DS'.
Try roasting UNPEELED (keeps them fom bleeding) beets until tender, cool, peel, slice, chill and serve with sliced red onion and an orange citronette dressing for a cool and refreshing salad.
 
Haven't checked in here in a while. I just ate and I'm hungry again!
We had huge portabello mushrooms stuffed with sauteed carrot, onion and garlic mixed with brown rice, herbs, and topped with a little grated paremsan. Drizzled with olive oil. Steamed broccoli. My son ate rice balls stuffed with shrimp. Doesn't like mushrooms. I don't either except for portabellos.

I made the ever-popular and anachronistically named "Husband's Delight Casserole ." This time I subbed green beans for half the ground meat.

What was neat about cooking tonight was that this was the first time I got to use produce I preserved myself--tomato sauce that I cooked and canned, and green beans that I snapped by the bushel and froze. Yaaay!

I would have been made with venison my husband harvested, except we're OUT of ground venison! Oct. 1 should bring more, though.
 
Baked a small hen very simply ..just some mineral sea salt, fresh ground pepper and paprika rubbed on... and baked some Macaroni 'n cheese from scratch ...and some Collard greens simmerin' with onion, garlic and jalapeno that I sauteed in sausage and bacon (beef) drippings before adding.

Good stuff!

Ohh.. forgot the baked Garnet yams.. yummy
