Hey, Southerners - got dumplings?

Forgot to subscribe, and just found this now:

cthrash, thank you. That second one just might be it. Had it years ago, made by a friend's mom who was sorta from Georgia and sorta from WVA and sorta from Arkansas, if you can imagine that. Schizo, kinda, but man, could she cook. Her dumplings I was wishing to recreate.

Sorry to put my Yankee nose in here (are we still yankees in Seattle?) but had to post this recipe. It's very similar to my great grandmother's recipe for blueberry dumplings. She was born and raised in New England. She used cinnamon instead of nutmeg.

I have very fond memories of her making these for me when I was about 11. It was the last time I saw her, as she died several years later.
 
My word. Fabulous. I must make dumplings ever day until I have tried all htese. Or til I keel over from topheavyness. Whichever comes first. Thanks, all!
 
Bama here and i've never heard of cornmeal dumplin's either, even my 83 yo granny hasnt heard of them. you know cornbread is southern so the dumps have to be good too. And you know down here we'll make dumplins out of just about anything for example squriell, coon, chicken and so on. Good luck on your dumps.

I have never heard of cornmeal dumplins , corn fritters and hushpuppys i have. If your biscuit dumplings fall apart then you may be useing to much grease or moisture. dumplings are a stiffer biscuit dough. I make mine just like biscuits except sweet milk instead of butter milk and not as moist.
 
There is no such thing as cornmeal dumplings allowed south of the Mason Dixon Line.

Now that is the southern recipe I'm used to. Throw in some salt and pepper as the dumplins cook, and of course shredded chicken, and you got yourself some good eatin'.

When we lived in Delaware they had these dumplins called Delaware 'Slicks'...they were almost like a large rectangular noodle. They were good too...but I just cannot shake the biscuit dumpling.

HEY...I bet you can put corn meal in the dumpling flour recipe and I think it'll taste GREAT...give it a different texture!!

Ok...I'm starved and its MIDNIGHT!!

Most folks around here make flat dumplings using plain flour, a little grease (lard or solid shortening) and hot water, roll it very thin on well floured surface. This is also great for making a cobbler. My ex mother in law could make some great ones (but she left all the skin, bones and gease in the chicken stock).

Now that I've told you how I'll fess up....I have never been able to make them very well at all.

My solutions: You can buy frozen dumplings or use flour tortillos. The tortillo ones are not good left over but are great fresh.
