Randomly 2 of my golden buffs started growing in their feathers last week.

The one picture you posted doesn't look like molting to me, more like roo damage from mounting. Sometimes feathers will come back in before molt, particularly if the entire feather came out, as in plucked. If the shaft is broken and the bottom still in the skin then it usually doesn't come back until molt.
