I will let the original poster answer about the sausage, as I have my own idea on that one. LOL But cut those cinnamon rolls about two fingers width for nice fat rolls.

I should have said that the sausage is cooked and drained-good question-I'm glad you asked!
I use half of the bread recipe to make the cinnamon rolls myself. I get 12 rolls out of the recipe.
If it is easier for you, when you get it rolled up with the butter/sugar/cinnamon/nuts, cut it in half and then half again and again. I rolled min so each roll was about an inch wide.
(I used dental floss to cut mine-it did not squish it by doing that)

Both start out the same way. Roll half the dough out into a good size rectangle, spread butter over top, followed by a layer of brown sugar and cinnamon. Roll the dough up (the long way), and cut into evenly sized rolls for cinnamon rolls. I get a pan of eight large rolls out of each half of the dough. They can be cut smaller if that's what you want.

For the coffee cake rings I sprinkle a layer of chopped walnuts and a variety of chopped dried fruits. I like dates, raisins, cranberries, apricots, and marichino (sp?) cherries. You have to be very careful when rolling the coffee cake, and take extra care to seal the seam. Carefully lift the roll and place, seam side down, onto a baking sheet. Shape the dough into a circle and seal the two ends together. Then I take a knife or a pair of scissors and cut small slits on top, going all the way around the ring. This will make them extra pretty as the dough rises for the second time and bakes. Once the rolls and coffee cakes are baked I let them cool for a while then drizzle glaze over the top while they are still warm. One batch of dough makes two coffee cake rings.

I hope that all makes sense. I'm not quite focused yet this morning.

Yes, Ma'am! Thank you very much for the recipe. I'm have loads of fun, this was my first time making bread. Now I need more yeast!
