Wow - you've got access to some really nice perches there! Chop it long, and you've got enough play-areas for a run for a queen!
Yep, seems like this is a GREAT opportunity to re-build/re-design the coop/run/shed configuration. Especially now that your shade and sun areas have changed! A couple weeks ago a young woman posted about loosing her coop to a tornado (in the coop/run design section of the forum). Perhaps you could post to her to see if her girls have had any difficulty laying.
Sorry about the garden loss. You might be surprised what survives - give it a chance. Our microburst last spring bent our tomato plants into very peculiar shapes - but the plants produced abundantly despite the odd shapes. Took some doing to stake 'em up off the ground - I ended up putting in 't' stakes and running wire with small sections of PVC pipe (the pipe would go under the stem and wire-tied together so the stem wouldn't get girdled). Worked well, took forever to do - but harvest was worth it! Did end up loosing a lot of pepper plants (smashed beyond recognition) and some corn plants (snapped in two). Most everything else seemed to survive.
