Horseradish help

I grew up on Miller’s Horseradish from Lockport. I now garden in East Texas zone 8a and horseradish has grown so well it has become a weed problem. My chickens love the leaves as they do mustard greens. Never had any complaints on the taste of their eggs.
I have found that my horseradish grows best when heavily mulched and then all but ignored. I use the leaves as mulch all over the garden. As others have said the keys to hot horseradish are waiting at least 3 minutes before added vinegar to your food processor of finely chopped roots and to freeze all you won’t use in a few days. I have also almost perfected my Kimmelweck bun but that’s a whole different forum.
