How can we fix my chicken foot when she wont let us touch her!

My full grown chicken has a crooked toe, that I need to fix with vet wrap. I am a little confused on how to wrap it. Should I bend her foot straight and then wrap it? Should I rewrap it every day? How long does it need to stay on there? Also this chicken is very skittish,any recommendations on how to hold her, so we can do the procedure? The wierd thing is that crooked toes is common in chicks but not full grown chickens!

She has had it for a while,she has a little red on her leg. Picture coming soon.
 
I catch mine off the roost. Turn them on their back and put head under arm. Use body and forearm to support wings and body. Leaves hand and other arm free to do what’s needed.

Not sure if it’s right, but have had several different hens in this position for 10-15 minutes at a time with zero ill effects.
 
It is hard to see where it is crooked because it is under the leaves. But it is the foot in the centeraa

I also thought it might be scaly mites. But she still has a crooked toe
 
I also thought her legs look scaly, so I will try and put vaseline on her legs and see if it mosturizes her legs, and then fix her toe. Her legs and feet also look red,but I think it is because of the cold weather. Any other worries/suggestions?
