like certain breeds lay certain colors?

Brown is coloured by blood, blue/green are coloured by bile. It sounds crazy, but that's how they get their colours.
That's what Nabiki explained. Genetics are the determinates of what color is laid. Different parts however make different colors

Also, white and brown eggs are both essentially white. If you crack a brown egg and look at the inside, you'll see that it's a white egg with a brown coating. But a blue egg is blue all the way through.

Just to be even more fascinating and complex, a GREEN egg is a blue egg with a brown coating! How cool is that!

woah! i didnt even know there were green eggs. i knew about blue ones but green!
