How do hatcheries sex their chicks so early?

Does anyone know how hatcheries sex their chicks the day after they hatch? Is this accurate?
They employ extremely skilled people who are able to tell the sex by looking in the vent of the chick (most hatcheries say 90% accuracy - some breeds are less clear - some, like autosex and sex-link, are more clear due to the abilty to use the down coloring instead of the vent). It is done immediately, as they ship the chicks on the day of hatch (not the day after).
 
They don't sex them the day after' they hatch, it's probably within the hour. they vent sex them. you have to know what you're doing to do it though, they have skilled people doing that. I'm not sure if they vent sex the auto sexing breeds or the sex linked birds though, that wouldn't make sense to me.

Cool! Does anyone know how to do it that used to work in a hatchery? Who teaches them?
