i have a flock of 21, 13 pullets, and 8 older hens going on 2yrs old . i been getting 15 eggs a day lately , i got 18 last friday and a couple other times this month. i have a light in the coop on a timer been useing it since october. come spring i might weed out the older ones that arent laying. i guess the only way to find out who is laying is to put a camcorder in the coop. lol.

From what I understand, you can check their vents.
If they are still laying, they will be pink and moist.
If not, they are dry and white.

We have used this method with good success so far.

If your getting 15 eggs a day out of 21 hens I would say they all are laying. All of my hens are pullets for my brown eggs. I have 15 hens do not use a light and get around 6 to 8 eggs a day. Before the cold I was getting 8 eggs a day, but a few just were not old enough yet. At that time I had probably 10 laying. I figured on each hen laying 6 eggs a week during peak, that would be 60 eggs a week. Divide that by 7 days and it comes to 8 eggs a day. Right on the mark.

You have 21 hens times 6 is 126 eggs a week. Divide 90 by 7 and it comes to 18 eggs a day. I would say your doing fantastic and they all are laying. Especially this time of year.

I have 21 pullets also. I am getting 13 a day right now and I know a few of mine are in moult. Chickens do not lay all at the same time and most will take a break in winter no matter what you do. Those that are not laying will be then. You probably have more than one hen taking same days off so I would not worry too much. After all most hens avg is 4 eggs a week at 2 years of age. Sounds to me like you are OK with yours getting up to 18 every couple of weeks.
