How do I know how much water to put in incubator?

I bought a janoel 12 incubator and I am on the 14th day and I am getting close to the 18th day and I am wondering how do I know how much water to pour

Have you candled or weighed to see how much weight has been lost?
By day 19 you want to add as much water as possible because you don't want the inner membrane to dry out during and after pipping.

The best way to do this(imo) is to use a hygrometer to keep track of your humidity. yes on day 18 you'll want to bump it up to at least 60%.

So no matter what just add as much water as I can? and no I have not weighed it

IMO, you need a hygrometer. And that hygrometer needs to be calibrated. The hygrometer will tell you what your humidity is, and whether you need to add more water. A lot depends on your current weather patterns. You use humidity to control air cell size. So... now is the time to assess air cells and do final humidity adjustments to achieve correct air cell size based on age of the eggs. If air cells are on target, you want to aim for 65% humidity at lock down.

I have home made incubators, so adjust my humidity with sponges and containers of water. I have no idea what your incubator has for a set up for managing humidity. Have you read "hatching eggs 101" in the learning center?
