We have a small (11 hens) mixed flock. Only 7 are currently laying and we already have more eggs than our family can eat. We are very intentional about their diet so absolutely everything that goes into their mouths is organic, non-gmo, corn & soy free. Sizes range from small (Polish) to jumbo (Australorp). We have green, brown, and white colors. For several reasons, and I’m firm on this, we will only offer mixed cartons and sell the freshest we have available at the time of sell.

Based on this information, how should I price them?

Yes, I agree. The only way to know how much to sell your eggs is to look at your local market. You can also look at the organic eggs at the supermarket to help estimate but your true "competition' will be found at farm stands and FB or Craigslist.

It also depends on WHERE you're selling them. If you live rural where most people have chickens (like I do), you'll have a hard time giving them away. I work over an hour away in a big city where my coworkers have never even heard of colored eggs. I sell mine for $6 / dozen and I've got a waiting list every week.

Edited to add: during the time when eggs were hard to find, people were selling their eggs for $12/doz. I never changed my price because didn't want to lose long-term customers.

Yeah I used to sell mostly to coworkers when we were still in the office. Now, we have many less birds and just keep what they lay.
